biscuit recipe | atta biscuits recipe | wheat biscuits recipe with detailed photo and video recipe. basically a small baked sweet food or snack which is prepared from wholemeal wheat flour or atta flour. typically it is eaten as a evening snack with masala chai or cutting chai, but not restricted to try for breakfast too.
this is my first biscuit recipe or atta biscuit recipe and hence i wanted to share a healthy one. i have already shared the butter cookie or naankhatai which is made entirely with maida or plain flour. while some may argue that cookie is just another synonym to biscuit but i disagree to it. cookie’s are typically sweet snacks where as biscuit can be both sweet and savoury. moreover, biscuit are generally crisp compared to cookies which are chewy in nature. further, the cookie are usually round in shape and biscuits can be in round, square and even rectangle in shape.
furthermore, some important tips and suggestions for a perfect atta biscuit recipe. firstly i have used wholemeal wheat flour for this wheat biscuit recipe. alternatively, you can also use plain flour or maida and follow the same procedure. secondly, always use the butter at room temperature and do not add the heated melted butter. also with respect to milk, add room temperature full cream milk while preparing the dough. lastly, once the biscuits are baked, allow it cool for 10-15 minutes and then remove from the backing rack.

Ingredients
- ½ cup unsalted butter, room temperature
- ¼ cup powdered sugar / icing sugar
- 1 cup wheat flour / atta
- ½ tsp baking powder
- ¼ tsp baking soda
- pinch of salt
- ¼ tsp cardamom / elachi, powdered
- 3 tbsp milk, room temperature
Instructions
- firstly, in a large mixing bowl take ½ cup unsalted butter and ¼ cup powdered sugar.
- beat the sugar and butter well with the help of hand mixer or whisk.
- further add 1 cup wheat flour, ½ tsp baking powder, ¼ tsp baking soda and pinch of salt.
- additionally add ¼ tsp cardamom powder or vaniila extract.
- mix and crumble the ingredients well with hand.
- furthermore add 3 tbsp milk and start to combine well.
- do not knead, just combine to form a dough.
- also make sure when the dough is cut, it has a crumbly texture.
- now flatten and roll out slightly thick with the help of rolling pin.
- seal the edges with your hand if cracks forms at the sides.
- now with the help of cookie cutter, cut into any desired shape. gather the remaining dough and make sure to prepare biscuits from it.
- place the cut dough on to a tray lined with baking paper.
- bake the biscuits in preheated oven at 160 degree celsius for 15 minutes or till the edges turn slightly golden.
- allow the biscuit to cool completely. biscuits will be soft when hot, and turns crunchy when cooled.
- finally, wheat biscuit is ready to serve with chai or store in airtight container for at least 2 weeks.
how to make wheat biscuit with step by step photo:

notes:
- firstly, replace wheat flour with maida to prepare maida biscuit.
- furthermore, skip the addition of salt if the butter is salted butter.
- also, to flavour the biscuits add roasted jeera to the dough and prepare jeera biscuit.
- additionally, cut biscuits to any desired shape and bake only till the edges turn slightly golden.
- finally, wheat biscuit will turn crunchy only after its cooled completely.

10 mins should be fine.
I converted cup of butter into grams unit and ended up with soft and moist dough. ruined the ingredients. please mention grams in your recipes further. it would be a great help.
