well, to be honest, there are many names for this urad dal bonda recipe in the market. some call it bonda and some prefer to call this recipe as deep fried vada. i personally like this recipe to be termed as bonda due to it bulgy round ball shape. anyway, there is another misconception in the market and is termed as mysore bonda recipe too. well according to me mysore bonda is made from maida or plain flour, similar to mangalore bajji or goli baje. the only difference between mysore and mangalore bajji is the fermentation process used in the later one. anyway, whatever the confusion around the name is, it is a lip smacking deep fried snack and can be served any time during the day.

furthermore some easy and important critical tips, suggestions and variations to the urad dal bonda recipe. firstly, i have used mixer grinder to ground the urad dal batter to a smooth and fluffy paste. but if you have access to a wet grinder, then it should be your first preference compared to the mixer grinder. secondly, the batter is no fermentation and it should not be allowed to rest as compared to any other deep fried batter. in addition, if you are using the batter later sometime, do not add salt and keep it in the refrigerator. lastly, deep fry these in small batches in a medium to low heat. you can keep the flame in high while doping these to oil, but switch to medium immediately.

Ingredients
  

  • 1 cup urad dal
  • 1 chilli, finely chopped
  • 1 inch ginger, finely chopped
  • few curry leaves, chopped
  • 2 tbsp coriander, finely chopped
  • ½ tsp pepper, crushed
  • 2 tbsp dry coconut, chopped
  • ¾ tsp salt
  • oil for frying

Instructions
 

  • firstly, in a large bowl soak 1 cup urad dal in water for 2 hours.
  • drain off the water and transfer to a mixi or grinder.
  • blend to smooth thick and fluffy batter adding 1-2 tbsp of water.
  • transfer the urad dal batter to a bowl.
  • beat in one direction for 2 minutes or until the batter turns smooth and fluffy.
  • now add 1 chilli, 1 inch ginger, few curry leaves, 2 tbsp coriander, ½ tsp pepper, 2 tbsp dry coconut and ¾ tsp salt.
  • combine and beat for a  minute.
  • now dip your hand in the water, and start dropping them one by one to hot oil.
  • keep the flame in lower to medium stir occasionally.
  • also, fry the vada till they turn golden brown and crisp.
  • drain off the vada on to kitchen towel to absorb oil.
  • finally, serve bonda with coconut chutney.

notes:

  • firstly, blend to thick batter else the bonda will not turn crisp and will be difficult to drop in oil.
  • also, blend in grinder for the very smooth and fluffy batter.
  • additionally, add salt just before frying as it releases water and makes the batter runny.
  • finally, bonda or urad dal vada recipe tastes great when served hot and crispy.
