anyway, some tips, suggestions and variations for the caramel custard or caramel pudding recipe. firstly, i have used homemade custard powder and i am very comfortable with it. preparing homemade is very simple, and you need follow 4:1:1 proportion of sugar, milk powder and corn starch. having said that you can use store bought too, but it is full of preservatives. secondly, you can easily experiment with the flavour and can add the desired flavour. i personally like the plain vanilla flavour, but you can experiment with strawberry, chocolate and even mango. lastly, i would heavily recommend to make this overnight and chill it in refrigerator to be served next day. it needs patience and time while preparing and hence it is ideal if made overnight.

Ingredients
- ¼ cup sugar
- ½ cup milk
- ½ cup curd / yogurt, thick
- ½ cup cream
- ½ cup condensed milk / milkmaid
- 1 tbsp custard powder, vanilla flavoured
- 1 tsp vanilla extract
Instructions
- firstly, transfer the caramelised sugar into a bowl.
- allow to cool for 5 minutes or until the caramelised sugar sets completely.
- further in a large bowl take ½ cup milk, ½ cup curd, ½ cup cream and ½ cup condensed milk.
- also, add 1 tbsp custard powder and 1 tsp vanilla extract.
- whisk and mix until everything is well combined.
- pour in caramelised set bowl.
- cover the bowl and steam for 30 minutes or until its set completely.
- cool down to room temperature and refrigerate for 2 hours.
- finally, unmould the caramel custard or custard pudding and enjoy.

sugar caramelisation:
- firstly, in a pan spread ¼ cup sugar.
- keeping the flame on medium heat the sugar.
- stir occasionally, until the sugar melts.
- sugar melts and turns golden brown. do not burn the caramelised sugar.
- transfer the caramelised sugar into a bowl and swirl. you can prepare pudding in small cups as well.
- allow to cool for 5 minutes or until the caramelised sugar sets completely.
eggless custard preparation:
- further in a large bowl take ½ cup milk, ½ cup curd, ½ cup cream and ½ cup condensed milk. ½ cup cream can be replaced with ½ cup milk powder.
- also, add 1 tbsp custard powder and 1 tsp vanilla extract.
- whisk and mix until everything is well combined.
- pour in caramelised set bowl.
- cover the bowl and steam for 30 minutes or until its set completely.
- cool down to room temperature and refrigerate for 2 hours.
- finally, unmould the caramel custard or custard pudding and enjoy.
notes:
- firstly, make sure to use fresh thick curd, else the custard will turn sour.
- also, if you are planning to skip curd then add 1 tbsp of gelatin or agar agar.
- furthermore, do not add any extra sugar as condensed milk gives sweetness.
- additionally, whisk the mixture smooth to avoid from any lumps formation.
