carrot chutney recipe | carrot pachadi | gajar ki chutney with detailed photo and video recipe. an easy and tasty alternative chutney recipe, to your day to day breakfast or lunch. it can be an ideal second chutney, if not the main one to many south indian popular breakfast dishes like idli, dosa and pongal recipes. the recipe is extremely simple to prepare yet tastes amazing with the combination of sweet and spice infused within it.
in south india, chutney recipes are generally prepared with almost all vegetables including the peel of many fruits and vegetables. each and every chutney has its own unique taste to offer. one such vegetable based chutney is carrot chutney which is largely popular due to its sweet and spice flavoured chutney recipe. i personally prepare it 2 occasions. basically, if i have some leftover carrots and i want to finish it off in one go than i end up preparing this chutney. the other occasion if i want an alternative to tomato and onion based chutney. basically, the taste and texture of this chutney are very similar to the latter.
while the recipe is extremely simple, yet i would like to highlight some tips, recommendations and serving suggestions for carrot chutney recipe. firstly, i always prefer to add coconut to most of vegetable-based chutneys. having said that it tastes equally good without it and is not mandatory to add it. secondly, the recipe can be easily extended by adding other veggies like onions, tomatoes and shallots. if you are planning to add these make sure to sauté it before grounding it. lastly, gajar ki chutney would last long for a week or 2 if prepared without coconut. you can easily refrigerate it in an airtight container and scoop only with the required amount of it.

carrot chutney recipe | carrot pachadi | gajar ki chutney
Ingredients
- 2 tsp oil
- 1 tsp urad dal
- 1 tsp chana dal
- 4 dried red chilli
- 2 clove garlic
- 2 tbsp onion, finely chopped
- 1 cup carrot, peeled & chopped
- 3 tbsp coconut, grated
- small ball tamarind / imli
- ½ tsp salt
for tempering:
- 2 tsp oil
- 1 tsp mustard / rai
- few curry leaves
Instructions
- firstly, in a tawa heat 2 tsp oil and roast 1 tsp urad dal, 1 tsp chana dal and 4 dried red chilli.
- also, saute 2 clove garlic and 2 tbsp onion until the raw smell disappears.
- further, add 1 cup chopped the carrot and saute until the colour changes.
- allow the mixture to cool completely, and transfer to the blender.
- add 3 tbsp coconut, small ball tamarind and ½ tsp salt.
- add in water as required and blend to smooth paste.
- now prepare the tempering by heating 2 tsp oil.
- add 1 tsp mustard and few curry leaves. allow to splutter.
- finally, pour the tempering over carrot chutney and serve with dosa or idli.
how to make carrot chutney with step by step photo:

notes:
- firstly, peel the carrot for rich orange colour for chutney.
- also, skip the coconut if you do not prefer the flavour.
- additionally, adding onions and garlic is optional, however, it enhances the flavour.
- finally, carrot chutney recipe tastes great when prepared slightly spicy.
