well preparing the pakoda or pakora recipe is not rocket science and can be made with almost any vegetables. but the interesting fact about each veggie is, each recipe is unique and different. particularly with the gobi ke pakode is slightly different from other vegetable based pakoda. basically, the batter for gobi pakora is slightly thin so that it easily applies to the delicate gobi florets. in other words, the batter for onion pakora is thick, so that it can be mixed with onion slices. the same cannot be applied here and may eventually break the delicate gobi florets. anyway, i am particularly interested with the end result and gobi pakoda would never disappoint.

furthermore, i would like to add some more tips, suggestions and variations for a perfect cauliflower pakoda recipe. firstly, the gobi florets have to be fresh and more importantly should hold the shape once it is deep fried. basically, i would not recommend using something which is one week old. secondly, if you prefer to have a crisp pakora you can play with either rice flour or even corn flour. i personally prefer to have a rice flour based crispiness but either can be used. lastly, you may not need any side dish to be served with these. but i personally like to be served with green chutney or any spicy chutney recipe.

Ingredients
  

for blanching:

  • 3 cup water
  • ½ tsp salt
  • 15 florets cauliflower / gobi

for masala paste:

  • 1 tsp kashmiri red chilli powder
  • ¼ tsp turmeric
  • ½ tsp garam masala
  • ¼ tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp pepper, crushed
  • ½ tsp ginger garlic paste
  • 1 tsp lemon juice
  • ½ tsp salt

besan batter:

  • 1 cup besan / gramflour
  • 2 tbsp rice flour
  • ½ tsp ajwain / carom seeds
  • ¼ tsp turmeric
  • ½ tsp kashmiri red chilli powder
  • pinch baking soda
  • ½ tsp salt
  • ½ cup water
  • oil for frying

Instructions
 

  • firstly, in a large kadai boil 3 cup water with ½ tsp salt.
  • add 15 florets cauliflower and boil for 2 minutes.
  • drain off the gobi and keep aside.
  • in a bowl prepare masala paste by adding 1 tsp chilli powder, ¼ tsp turmeric, ½ tsp garam masala, ¼ tsp cumin powder, ½ tsp coriander powder, ½ tsp pepper, ½ tsp ginger garlic paste, 1 tsp lemon juice and ½ tsp salt.
  • mix well making sure all the spices are well combined.
  • further, add in blanched gobi and mix well.
  • coat the spice paste uniformly. marinate for 15 minutes allowing spices to absorb.
  • meanwhile, prepare besan batter by taking 1 cup besan, 2 tbsp rice flour, ½ tsp ajwain, ¼ tsp turmeric, ½ tsp chilli powder, pinch baking soda and ½ tsp salt.
  • add ½ cup water and mix to a smooth lump free batter.
  • dip the marinated gobi in besan batter and deep fry in hot oil.
  • stir occasionally, until the gobi turns golden brown and crisp.
  • finally, cauliflower pakoda / gobhi ke pakode tastes great with green chutney.
