paneer pakora recipe | paneer pakoda | how to make crispy paneer pakora with detailed photo and video recipe. a simple snack recipe prepared with spiced paneer cubes, coated with besan or chickpea flour batter. it is one of the popular pakora variations with moist and spice coated paneer inside and crisp chickpea coating outside. it can be ideal party starter or evening snack served with either green chutney or tomato sauce.
pakora recipes are very common snack recipes prepared in almost every indian households. perhaps almost all vegetables are used to prepare this delicacy and served as snacks, side dish and even used in curries or sabzis. my personal favourite has always been paneer pakora recipe and nothing can beat it’s crisp and moist taste combination. traditionally the paneer pakoda recipe was limited to households in north india. but after onboarding this simple recipe by the street food vendors, it has become significantly popular among urban youths. moreover, there are several variations to these pakoras, especially with its coating. after coating it with besan flour, it can be rolled on top crushed oats, boondi, breadcrumbs to have more crisp and rough surface.
while the recipe is extremely simple, yet some tips, recommendation and serving ideas for paneer pakora recipe. firstly, in this recipe, i have roughly coated the paneer cubes with spice powders before coating and deep frying. alternatively, you can sandwich 2 paneer cubes with green chutney, tomato sauce or with spice powder followed by coating and deep frying. secondly, ensure to use soft and dry paneer cubes for these pakora recipes. otherwise while deep frying it may splutter and also lose its coating. lastly, adding baking soda is completely optional and it does not add any taste to it. however, it makes puffy and more visually attractive.

Ingredients
for marination:
- 1 tsp ginger garlic paste
- ½ tsp kashmiri red chilli powder / lal mirch powder
- ¾ tsp chaat masala
- 1 tsp kasuri methi / dry fenugreek leaves
- ¼ tsp salt
- 9 cubes paneer / cottage cheese (cubed)
for besan batter:
- ¾ cup gram flour / besan
- 2 tbsp rice flour
- ¼ tsp turmeric / haldi
- ¼ tsp kashmiri red chilli powder / lal mirch powder
- ¼ tsp hing / asafoetida
- ¼ tsp chaat masala
- ¼ tsp salt
- ½ cup water
- oil for frying
Instructions
- firstly, in a large mixing bowl take 1 tsp ginger garlic paste, ½ tsp chilli powder, ¾ tsp chaat masala, 1 tsp kasuri methi and ¼ tsp salt.
- combine well forming a paste.
- now add 9 cubes paneer and rub gently covering masala paste to paneer. keep aside.
- further, prepare besan batter by taking ¾ cup besan and 2 tbsp rice flour in a mixing bowl.
- also add ¼ tsp turmeric, ¼ tsp chilli powder, ¼ tsp hing, ¼ tsp chaat masala and ¼ tsp salt.
- combine all the ingredients well.
- add in ½ cup water and whisk smooth.
- also, add a pinch of baking soda and mix gently.
- dip the marinated paneer into prepared besan batter and coat it completely.
- furthermore, deep fry in hot oil till they turn golden brown.
- finally, paneer pakora recipe or paneer bajji is ready to serve.
how to make paneer pakora with step by step photo:

- now add 9 cubes paneer and rub gently covering masala paste to paneer. keep aside.
- further, prepare besan batter by taking ¾ cup besan and 2 tbsp rice flour in a mixing bowl.
- also add ¼ tsp turmeric, ¼ tsp chilli powder, ¼ tsp hing, ¼ tsp chaat masala and ¼ tsp salt.
- combine all the ingredients well.
- add in ½ cup water and whisk smooth.
- make a smooth batter without forming any lumps.
- also, add a pinch of baking soda and mix gently. do not over mix as baking soda will lose its property.
- dip the marinated paneer into prepared besan batter and coat it completely.
- furthermore, deep fry in hot oil.
- also stir occasionally and fry on both sides.
- further, fry the paneer till they turn golden brown.
- finally, paneer pakora recipe or paneer bajji is ready to serve.
notes:
- firstly, press and wipe off excess moisture from paneer, else it may splutter in oil.
- also using rice flour gives a crispy texture to pakora. you can replace rice flour with cornflour for extra crispiness.
- additionally, slit the paneer in the center and stuff with spice mix instead of coating it outside.
- finally, paneer pakora recipe or paneer bajji tastes great when served hot.
