this recipe is very much inspired from my previous cheesy bread roll recipe. i have used the same stuffing, but i wanted to replace the bread with some vegetable and i wasn’t sure what vegetable it could be. meanwhile, my husband was requesting to prepare mushroom curry, and i got the idea of using mushroom for this stuffing. however, i was skeptical about the cheese as it would come out while deep frying in hot oil. so i adopted the idea of tooth pick from the food food channels video.
also, i have used the double coating of breadcrumbs which help to prevent the cheese melting out while frying. moreover, after the double coating, do not forget to freeze it for minimum 30 mins. this is the extra precaution for cheese not melting out. this is an optional step, however, i would strongly recommend it. furthermore, i have used panko breadcrumbs and i would heavily recommend to use it for this recipe.

Ingredients
main ingredients:
- 8 mushrooms / kumbh
- 1 cup panko bread crumbs or any of your choice
- oil for deep frying
- 4 to othpick to secure mushrooms
for stuffing:
- 1 potato, boiled and peeled
- ¼ onion, finely chopped
- ½ inch ginger, finely chopped
- few coriander leaves, finely chopped
- ¼ cup mozzarella cheese, shredded
- ½ tsp kashmiri chilli powder
- ¼ tsp chaat masala
- ¼ tsp dry mango powder / amchur powder
- salt to taste
for binding paste:
- 2 tbsp maida / all-purpose flour / plain flour
- 2 tbsp corn starch
- ¼ cup water
Instructions
cheesy stuffing recipe:
- in a large mixing bowl, smash 1 boiled potato.
- also add finely chopped onion, ginger and coriander leaves to it.
- now add grated / shredded cheese.
- add spices like chilli powder, chaat masala, dry mango powder and salt to taste.
- mix everything well and keep aside.
corn - maida binding paste recipe:
- in a small bowl, take corn flour and maida.
- make a thick flowing paste adding required water. for a healthier option replace all purpose flour with besan. make a thick flowing paste.
stuffing mushroom recipe:
- take 8 medium sized mushrooms. carefully break and remove the stems from them.
- now take the prepared stuffing and stuff into mushrooms cavity.
- join 2 mushrooms by keeping the stuffing side intact.
- secure with a toothpick. this is very important, else there is a chance of melting out cheese while deep frying.
- dip secured mushroom in corn flour- maida batter. cover on all the sides.
- then coat the mushrooms in breadcrumbs. alternatively, you can also use rava.
- repeat dipping in maida-corn paste and breadcrumbs again. double coating is very important, else there is a chance of melting out cheese while deep frying.
- now freeze the coated mushrooms in freezer for 15-30 minutes. this is the extra precaution for cheese not melting out.
- heat oil. meanwhile, dust the excess bread crumbs. place them carefully in the medium hot oil.
- fry them till they turn golden brown.
- drain and place on an absorbent paper.
- serve cheesy stuffed mushroom hot with tomato ketchup or as it is.

notes:
- use fresh white mushrooms.
- do not over stuff the stuffing as there is high chance of cheese to melt out and spoil oil.
- make sure to coat the mushrooms well with thick paste of corn-maida paste.
- use panko breadcrumbs for best crispy golden brown.
- using toothpick helps to secure 2 mushrooms well.
- be sure to remove toothpick while eating.
