to be honest this my 4th attempt with banana bread and i had actually given up with banana bread. but i was getting continuous motivation from my husband and i thought of trying this recipe for last time. i use to miss something or other and the bread would turn either too sweet or hard. hence this is a full proof recipe of eggless banana bread recipe. also i have used baking powder and baking soda in this recipe, hence it is a no yeast recipe. this is a vegan banana bread recipe as no butter or milk products used and oil is used as replacement for moist and softness.
some important tips, variations and suggestions for a soft, moist and fluffy vegan eggless banana bread recipe. traditionally, banana bread is typically prepared with just plain flour and no wheat flour is used. if you need an authentic banana bread recipe than just use all purpose flour and skip wheat flour. secondly, always use ripe bananas for this recipe. ripe banana would ensure to release more flavour than compared to raw banana. lastly, i have used normal cooking oil as one of the wet ingredient. if you are not a vegan, than replace the oil with butter for more flavour.

Ingredients
- 3 banana, ripped
- ¾ cup sugar, or 1 cup depending on sweetness of banana
- ½ cup oil or butter
- 1 tsp vanilla extract
- ¾ cup maida / plain flour / all-purpose flour
- ¾ cup wheat flour / atta
- 1 tsp baking powder
- 1 tsp baking soda / sodium bicarbonate
- ¼ tsp cinnamon powder / dalchini powder
- pinch of salt
- ½ cup walnut / akharot
Instructions
- firstly, take ripped bananas and cut them into pieces.
- also add sugar and mash the banana.
- furthermore, add oil and vanilla extract.
- also sieve maida, wheat flour, baking powder, baking soda, cinnamon powder and salt.
- blend and combine all the dry ingredients with the banana puree.
- furthermore, add walnut and fold gently.
- transfer the cake batter into the cake mould or bread mould.
- pat the tray twice to remove the air incorporated into the batter.
- place the tray into preheated oven. bake the cake at 180 degree celsius or 356 degree fahrenheit for 40 minutes.
- further, allow the cake to cool completely.
- and later cut to slices and serve.
- finally, serve the eggless & vegan banana bread or store in airtight container.
how to make vegan eggless banana bread with step by step photo:
- firstly, take 3 ripped bananas and cut them into pieces. well ripped bananas gives great results.
- also add ¾ cup sugar to the same bowl. add more sugar if the banana is not sweet or depending on your preferences.
- mash the banana with the hand blender or with the help of fork. sugar helps to mash the bananas more easily.
- make smooth puree of banana making sure the sugar also has melted completely.
- furthermore, add half cup of oil. use any neutral flavoured oil like sunflower or vegetable oil. alternatively, use butter if you are not vegan.
- additionally add vanilla extract.
- further, add ¾ cup maida, ¾ cup wheat flour, 1 tsp baking powder, 1 tsp baking soda, ¼ tsp cinnamon powder and pinch of salt.
- sieve all together making sure there are no lumps.
- blend and combine all the dry ingredients with the banana puree.
- do not over blend as the bread turns to be chewy and hard.
- blend smooth till there are no lumps and batter turns smooth. also make sure the batter is of smooth dropping consistency.
- furthermore, add walnut and fold gently.
- transfer the batter into the bread tray or bread mould. make sure to grease the mould and place a butter paper at the bottom to avoid sticking. (length: 26 cm, width: 12 cm and height: 7 cm)
- pat the tray twice to remove the air incorporated into the batter.
baking vegan banana bread recipe:
- place the cake tray into preheated oven. bake the cake at 180 degree celsius or 356 degree fahrenheit for 40 minutes.
- or bake till the toothpick inserted comes out clean.
- further, allow the cake to cool completely.
- and later cut to slices and serve.
- finally, serve the eggless & vegan banana bread or store in airtight container.
notes:
- firstly, we are not using egg hence the make cake moist we are adding more oil.
- furthermore, use well ripped bananas to get great results.
- also add nuts of your choice or chocolate chips.
- additionally, replace the maida with wheat flour for more healthy option.
- moreover, keep an eye while baking bread as each oven works differently.

nope you need baking soda to puff. perhaps can reduce the oil or butter quantity to make it bit harder

I tried the recipe. Within 25 mins the top and the bottom was turned black but middle portion came and spongy cake. I haven’t used blender and the batter was not that consistency ( it was not that smooth). How to do without hand blender?
