idli dhokla recipe | instant dhokla in idli stand | idli khaman with detailed photo and video recipe. a unique combination of a south indian cuisine recipe with the popular variant from western indian gujurati cuisine. basically, it has the same shape and texture of idli recipe but made with the besan or dhokla batter. it can be an ideal morning breakfast recipe, which can be made within minutes.

idli dhokla recipe | instant dhokla in idli stand | idli khaman with step by step photo and video recipe. dhokla and idli recipes have a lot in common with its shape and texture. but the recipes come from different cuisine background and a more importantly different set of ingredients. however, these 2 recipes can be integrated and clubbed together to form one recipe and idli dhokla recipe or idli khaman is one such variation.

i have posted quite a few variations of dhokla recipe, which includes the instant one without fermentation, authentic one with channa dal and fermentation and the semolina based rava dhokla recipe. however, this recipe is very unique with the combination of 2 different recipes from 2 different regions. in other words, i have just used the same batter of dhokla and steamed it in an idli stand. unlike the traditional dhokla recipe, where it is steamed in a large container, there is no hassle of cutting and shaping it later. it is already shaped like a small disc and can be served immediately without any issues. i personally like this recipe and i make it when i am bored with the rice and urad dal idli. it is instant, quick and more importantly healthy.

furthermore, i would like to add some more tips, suggestions and variations to instant dhokla in idli stand. firstly, while preparing the batter, i used curd or yoghurt in this recipe to have the sour taste. you may achieve the same by adding lemon juice or lime juice (2 tsp). secondly, if you do not have an idli stand you may use small steel cups to prepare the cup idli dhokla recipe. lastly, in this recipe, i have added eno fruit salt to hasten the fermentation process. eno fruit salt does not react with turmeric, whereas baking soda reacts with turmeric to result in pink colour. also, it would spoil the taste and hence it is better to use eno fruit salt.

Ingredients
  

for idli dhokla:

  • cup besan / gram flour
  • 2 tbsp rava / semolina / suji, fine
  • ½ tsp ginger paste
  • 1 chilli, finely chopped
  • ½ tsp turmeric
  • 1 tsp sugar
  • pinch hing / asafoetida
  • ¼ cup curd
  • 2 tbsp oil
  • ½ tsp salt
  • 1 cup water
  • ½ tsp eno fruit salt

for tempering:

  • 2 tbsp oil
  • 1 tsp mustard
  • ½ tsp cumin
  • 1 tbsp sesame
  • pinch hing / asafoetida
  • 3 chilli, slit
  • few curry leaves
  • ¼ cup water
  • 1 tbsp sugar
  • ¼ tsp salt
  • 1 tsp lemon juice
  • 2 tbsp coconut, grated
  • 2 tbsp coriander, finely chopped

Instructions
 

  • firstly, in a large bowl take 1½ cup besan, 2 tbsp rava, ½ tsp ginger paste and 1 chilli.
  • also add ½ tsp turmeric, 1 tsp sugar, pinch hing and ¼ cup curd.
  • now add 2 tbsp oil, ½ tsp salt and 1 cup water.
  • whisk and mix well making sure everything is well combined.
  • now add ½ tsp eno fruit salt and mix gently.
  • mix until the mixture turns frothy.
  • now immediately pour the batter into greased idli plate.
  • place the idli plate in steamer and steam for 12 minutes.
  • now prepare the tempering, heat 2 tbsp oil.
  • add 1 tsp mustard, ½ tsp cumin, 1 tbsp sesame, pinch hing, 3 chilli and few curry leaves.
  • stir and splutter the tempering.
  • now pour ¼ cup water, 1 tbsp sugar, ¼ tsp salt and 1 tsp lemon juice.
  • mix and boil making sure everything is well combined.
  • pour the tempering over the idli, make sure the water is absorbed by idli.
  • garnish with 2 tbsp coconut and 2 tbsp coriander.
  • finally, enjoy idli dhokla with green chutney.

notes:

  • firstly, make sure use good quality besan else ht dhokla will be dense.
  • also, after adding eno, steam the dhokla immediately to have soft and spongy dhokla.
  • additionally, the same batter can also be poured into cups and steamed if you do not have access to idli plate.
  • finally, idli dhokla recipe tastes great when served hot and spicy.
