It is super popular for its softness and sponginess which is mainly achieved by the combination of eno powder and citric acid. Nylon Khaman Dhokla Recipe | Instant Gujarati Nylon Dhokla
Ingredients
- 2 cup besan / gram flour
- ¼ tsp turmeric
- ¼ cup sugar
- ½ tsp salt
- 1 cup water
- 2 tbsp lemon juice
- 2 tbsp oil
- 1 tsp eno fruit salt
for tempering:
- 2 tbsp oil
- 1 tsp mustard
- 5 chilli, sliced
- few curry leaves
- pinch hing
- ½ cup water
- 2 tbsp sugar
- ¼ tsp salt
for garnishing:
- 2 tbsp coriander, chopped
- 2 tbsp coconut, grated
Instructions
- Firstly, in a large bowl take 2 cup besan, ¼ tsp turmeric, ¼ cup sugar and ½ tsp salt.
- Mix well making sure everything is well combined.
- Now add 1 cup water and mix well using a whisk.
- Add water as required and whisk for 5 minutes.
- Prepare a fluffy and light batter.
- Cover and rest for 15 minutes.
- Now add 2 tbsp lemon juice and 2 tbsp oil.
- Continue to whisk for 5 more minutes to get a fluffy batter.
- Further, add 1 tsp eno fruit salt and 2 tbsp water.
- Mix gently until the batter turns frothy.
- Transfer the batter immediately to the greased tray.
- Place in a steamer and steam for 20 minutes.
- Now cut the dhokla into pieces.
- To prepare the tempering, heat 2 tbsp oil. Add 1 tsp mustard, 5 chilli, a few curry leaves, pinch hing, and splutter the tempering.
- Further add ½ cup water, 2 tbsp sugar, and ¼ tsp salt.
- Mix and boil for 2 minutes, making sure everything is well combined.
- Pour the tempering over the dhokla and rest for 20 minutes so that the dhokla absorbs all the water.
- Before serving, top with 2 tbsp coriander and 2 tbsp coconut.

Notes:
- Firstly, make sure to add water slowly, as the consistency of the batter is very important.
- Also, after adding Eno fruit salt, steam the batter immediately, or else the dhokla will not be soft and fluffy.
- Additionally, instead of lemon juice, you can use citric acid. And in place of eno fruit salt add baking soda.
- Finally, Nylon Khaman Dhokla Recipe has to be steamed well, or else the dhokla will remain raw in the center.
