One such easy and simple instant recipe is the instant idli made with rice flour and served with a wide range of chutney recipes.

I have posted quite a few instant recipes now on my blog, but this has to be the best or even better than the traditional recipe. In other words, when I compare the effort and ingredients used to the result, I do not have any hesitation in calling the best instant recipe. The texture, lightness, and softness are parallel with the traditional fermented recipe. Particularly, when this instant idli is served hot with a spicy idli chutney, you would just forget the traditional rice and urad dal-based recipe. I was skeptical when I first tried that, but after seeing the result, I am certainly not going back. Especially, when there is nothing planned for a healthy morning breakfast, this can be a game changer. Do try this and I am certain that you would love it.

Firstly, the recipe batter is made with a combination of rice flour and upma rava. Adding rava helps to get the porous texture, however not a mandatory ingredient. You may skip it if you do not like it or do not have it. Secondly, adding sour yogurt or curd helps to get lite or soft idli. Try to add homemade plain yogurt as the store-bought may contain sugar in it. Lastly, the batter has to be semi-thick and consistent. It should not be either thick or thin and follow the traditional idli batter consistency. If you do not have sour yogurt, you may need to rest the batter for 20-30 mins.
