probably, my love to kulfi started during my schooling days. i use to get a matka kulfi next to my school, and i use to top it with some pistachios. it use to taste amazing and out of this world. but unfortunately we had to relocate to udupi and i never got the same taste. perhaps, in search of the same taste, i was able to learn this amazing kulfi recipe. and today i am sharing it with you all.

furthermore, i wanted to touch base with the history of kulfi recipe before jumping into actual recipe. basically, kulfi is a persian word and the origin of this recipe goes back till the mughal dynasty. even before the conception of mughul dynasty, sweet thick evaporated milk was famous with the hindu community. the mughal community, topped the same mixture with pistachios, kesar. and gave a shape of cone to deep freeze in slury ice.

Ingredients
  

  • 1.5 litre milk, full cream
  • ¼ cup cream, optional
  • ¼ cup sugar, adjust to your sweetness
  • 20 pistachios, chopped
  • 2 tbsp saffron milk
  • ½ tsp cardamom powder

Instructions
 

  • firstly, in a thick bottomed pan take 1.5 - 2 litres of full cream milk and get to a boil.
  • once the milk comes to a boil, add cream and give a good stir.
  • furthermore, simmer for 30 minutes and keep stirring in between.
  • next, add sugar and give a good mix.
  • simmer for 5 minutes or till the milk thickens completely.
  • additionally, add chopped pistachios, saffron milk and cardamom powder.
  • then give a mix and simmer further more for 5 minutes.
  • allow the thickened milk to cool completely. this may take atleast an hour.
  • after the milk is cooled completely, transfer them to kulfi moulds or to a plastic glass.
  • cover the glass with cling wrap or you can use aluminium foil.
  • furthermore, freeze the cup for atleast 5 hours or overnight.
  • after 5 hours or more when the kufi is set completely. insert a stick in between the cup.
  • then slowly warm up by rubbing in between your hands. you can also dip in warm water.
  • gently, remove the kulfi from the glass / mould and garnish with few chopped pistachios.
  • finally, serve kulfi immediately.

notes:

  • firstly, use full cream milk for best results.
  • furthermore, you can replace sugar with condensed milk. this helps to give nice flavour and thickness.
  • additionally, to prepare badam kulfi, add chopped badam pieces. or you can also add badam powder.
  • most note worthy, use thick bottomed pan and keep stirring in between. else there are chances for milk to burn.
  • finally, you can also use ice cream popsicle or kulfi moulds to prepare perfect kulfis as served in restaurants.
