lately, i have been getting a lot of requests for no maida and no yeast recipes. till now, all the pizza recipes i have posted, it is either with plain flour or with yeast. basically, till now i have attempted traditional recipes, but may not be practical for many of my readers. for instance, some may not prefer maida, and some avoid yeast as it not easy to get. in addition, some do not have an oven and some may complain about the affordability of pizza cheese. hence i thought of combining all the no’s in one recipe make a unique pizza recipe. here i have used pasta white sauce as a replacement to cheese. you may not get the same gooey texture like cheese but its close enough and in par with the taste. hence i would recommend you to try when this once and decide.

furthermore, i would add some more tips, suggestions and variations to no cheese pizza recipe. firstly, to prepare the white sauce, i have used the combination of wheat flour, milk to get a creamy sauce. however, the traditional white sauce is made with maida or plain flour and if you are comfortable with it, you can use it. secondly, the dough prepared for the pizza base has to be a smooth one and well kneaded with your hands. this ensures the gluten is activated and helps to achieve the required pizza texture for the base. in addition, it has to be rested well for a minimum of 2 hours. lastly, with the toppings, it is completely open-ended and you can add as per your preference. however, try to add colourful vegetables and try to make it more attractive.

Ingredients
  

for pizza dough:

  • 2 cup wheat flour / atta
  • ½ tsp baking soda
  • tsp baking powder
  • 2 tsp sugar
  • 2 tbsp butter, room temperature
  • 1 tsp salt
  • ¾ cup buttermilk
  • warm water, for kneading
  • for cheese alternative:
  • 2 tbsp butter
  • 2 tbsp wheat flour
  • 2 cup milk
  • ½ tsp salt
  • ¼ cup eggless mayonnaise

for instant pizza sauce:

  • ½ cup tomato sauce
  • 2 tbsp chilli sauce
  • 1 tsp chilli flakes
  • 1 tsp mixed herbs

for toppings:

  • few capsicum, sliced
  • few onion, sliced
  • few tomato, sliced
  • sweet corn, boiled or frozen
  • chilli flakes
  • mixed herbs

Instructions
 

wheat pizza dough preparation:

  • firstly, in a large bowl take 2 cup wheat flour, ½ tsp baking soda, 1½ tsp baking powder, 2 tsp sugar, 2 tbsp butter and 1 tsp salt.
  • crumble and mix well making sure everything is well combined.
  • now add ¾ cup buttermilk and mix well. you can alternatively add ¼ cup curd.
  • knead well, adding water as required.
  • knead to a smooth and soft dough. cover and rest for 2 hours.

cheese alternative preparation:

  • firstly, in a large kadai heat 2 tbsp butter and roast 2 tbsp wheat flour on low flame.
  • roast until the atta turns aromatic. do not brown the flour as the cheese sauce will turn brown then.
  • now add 2 cup milk and stir continuously.
  • stir until the milk is well combined with the flour.
  • cook until the sauce thickens.
  • now add ½ tsp salt and mix well.
  • transfer to a bowl and cool completely.
  • further, add ¼ cup eggless mayonnaise and mix well.
  • cheese alternative is ready. keep aside.

instant pizza sauce preparation:

  • in a small bowl take ½ cup tomato sauce, 2 tbsp chilli sauce, 1 tsp chilli flakes and 1 tsp mixed herbs.
  • mix well making sure everything is well combined.
  • instant pizza sauce is ready. keep aside.

pizza preparation:

  • after 2 hours of resting the dough, knead gently and pinch a ball sized dough.
  • dust it with wheat flour and roll gently.
  • roll to a slightly thick dough.
  • now prick with a fork to prevent from puffing while cooking.
  • place the rolled pizza base over hot tawa and cook on medium flame.
  • cook until the base is fully cooked. flip over and press gently.
  • now spread 2 tbsp of prepared pizza sauce.
  • also spread 2 tbsp of prepared cheese alternative.
  • further top with capsicum, onion, tomato and sweet corn.
  • sprinkle chilli flakes and mixed herbs.
  • cover and cook on low flame for 2 minutes.
  • finally, slice the pizza and enjoy.
