You can certainly use this for morning breakfast, evening snacks or for dinner too. I generally make it for my breakfast but do let me know what’s your preferred way of consuming this recipe.

Yet you may also use other types of flavoured oats too, but avoid using any nut mixed oats. secondly, adding eno or baking soda helps to get the soft and puffy texture to the omelette. it is not mandatory to use it and maybe skipped but I would personally recommend it. lastly, the omelette contains all the spices and herbs and thus making it a complete meal. but you may also choose some supporting condiments like green chutney, tomato sauce and even chilli dips.

Ingredients
- 1 cup oats, rolled
- ¼ cup rava / semolina, coarse
- ¼ cup besan
- 1 tsp cumin
- ¼ tsp turmeric
- ½ tomato, chopped
- ½ carrot, chopped
- ½ onion, finely chopped
- ½ capsicum, chopped
- ¼ cup curd
- ½ tsp salt
- ½ tsp chilli flakes
- ½ cup water
- ½ tsp eno fruit salt
- oil, for roasting
Instructions
- firstly, in a mixer jar take 1 cup oats and finely powder it. make sure to use unflavoured quick or rolled oats.
- transfer the oats powder to a large bowl.
- add ¼ cup besan, 1 tsp cumin and 1/4th tsp turmeric.
- also add ½ tomato, ½ carrot, ½ onion, ½ capsicum, ¼ cup curd and ½ tsp salt.
- mix well combining everything well.
- further, add ½ tsp chilli flakes and ½ cup water.
- mix well forming a smooth batter.
- rest the batter for 5 minutes, or until the oats and rava are soaked well.
- now add water as required and form a smooth batter.
- just before making an omelette, add ½ tsp eno fruit salt and mix gently.
- mix until the batter turns frothy.
- immediately, heat 2 tsp oil in a pan and pour the prepared batter.
- swirl a little to spread uniformly.
- sprinkle chilli flakes, cover and cook for 2 minutes.
- once the base is cooked well, flip over and cook both sides.
- also, slit in the centre and add oil, for roasting ½ tsp butter, few coriander for extra flavour.
- finally, oats omelette recipe tastes great when served hot and with lots of vegetables.

- also, instead of eno you can use baking soda.
