well, as i was explaining, this instant and crispy dosa recipe are very similar to the rava dosa recipe or to my latest aloo dosa recipe. in aloo dosa, i had used boiled and mashed potatoes paste and mixed it with rava and rice flour batter. this way it makes it instant and no fermentation is required. however, there is another way of preparing the same dosa. it includes soaking, fermentation, grounding and overnight preparation. even this way of preparing results in a tasty dosa, but i personally prefer to have an instant version compared to the lengthy version. this makes it easy and ideal dosa for most of us especially when you have not planned the previous night for morning breakfast.

furthermore, some more additional tips, suggestions and variants to the bottle gourd dosa recipe. firstly, in this recipe, i have used only rice flour and rava on top of bottle gourd paste. these 2 flours are more than sufficient for a crisp dosa, but you may also add maida or wheat flour to make it less crispy. secondly, similar to rava dosa recipe, it has to be roasted in a low to medium flame to get that extra crispiness. also i would recommend using a non-stick dosa pan or tawa and avoid using cast iron. a non-stick pan helps to get crisp and to remove easily. lastly, with this post i have also shared the spicy red chutney which should be ideal for this dosa. but you may also serve it with coconut or even pickle too.

Ingredients
  

  • ½ bottle gourd / lauki / sorekai
  • cup rice flour
  • ½ cup rava / semolina / suji, coarse
  • ¾ tsp salt
  • 4 cup water
  • 1 onion, finely chopped
  • 2 chilli, finely chopped
  • 1 tsp cumin
  • 2 tbsp coriander, finely chopped
  • oil, for roasting

Instructions
 

  • firstly, peel the skin of lauki and cut it into pieces. make sure to remove the seeds as well.
  • blend the bottle gourd into a smooth paste.
  • transfer the bottle gourd paste into a large bowl.
  • add 1½ cup rice flour, ½ cup rava and ¾ tsp salt.
  • pour 4 cup water and mix using a whisk.
  • further add 1 onion, 2 tbsp coriander, 2 chilli, 1 tsp cumin and 2 tbsp coriander.
  • mix well and rest for 10 minutes for rava to soak well.
  • after 10 minutes, you can see the batter is watery. you can adjust the consistency by adding water if required.
  • when the pan is super hot, pour the batter on the pan.
  • spread 1 tsp oil and allow to roast for 2 minutes or until the dosa turns crisp.
  • finally, enjoy crispy lauki dosa recipe with chutney.

  • firstly, make sure to grind the lauki really well, else it will be difficult to cook.
  • also, adjust the consistency of the batter by adding water as required. if the batter is thick, then the dosa will be soft.
