i have already posted a peanut masala recipe, which is a besan coated and deep fried recipe. it is a typical evening snack to munch with a sip of coffee or tea but can’t be served as an appetiser or starter. hence i wanted to share something unique recipe with just peanuts and also no deep frying. thankfully my husband reminded of this raja special recipe and how we use to enjoy this while we were in india. as a matter of fact, there are several local variations to this recipe across south india. and in this post, i have shared my personal favourite recipe with finely chopped tomatoes, onions and grated carrots. the other version is the dry version without any vegetable chopping and i feel it pale.

Ingredients
- 1 cup peanuts
- 2 tsp oil
- few curry leaves
- ¼ tsp turmeric
- ¼ tsp kashmiri red chilli powder
- ¾ tsp pepper, crushed
- pinch hing / asafoetida
- ½ tsp salt
- 2 tbsp onion, finely chopped
- 2 tbsp tomato, finely chopped
- 2 tbsp carrot, grated
- 2 tsp coriander, finely chopped
- 1 tsp lemon juice
Instructions
- firstly, heat 2 tsp of oil and roast few curry leaves.
- roast on low flame until the curry leaves turn crisp.
- keeping the flame on low add ¼ tsp turmeric, ¼ tsp chilli powder, ¾ tsp pepper and pinch of hing.
- saute on low flame without burning the spices.
- further, add roasted peanuts and ¼ tsp salt.
- saute for a minute, or until the masala is coated well.
- transfer the masala peanuts into the bowl.
- crush the curry leaves, congress kadlekai is ready.
- to prepare chaat, add 2 tbsp onion, 2 tbsp tomato, 2 tbsp carrot, 2 tsp coriander, 1 tsp lemon juice and ¼ tsp salt.
- mix well making sure all the vegetables are mixed well.
- finally, enjoy raja special / masala peanut chaat as a snack.
how to make raja special recipe with step by step photo:
- firstly, dry roast peanuts on low to medium flame until the skin of peanuts separate. alternatively, use store brought roasted peanuts.
- now cool the peanuts completely, and start to separate the skin of peanuts by rubbing.
- in a tawa heat 2 tsp of oil and roast few curry leaves.
- roast on low flame until the curry leaves turn crisp.
- keeping the flame on low add ¼ tsp turmeric, ¼ tsp chilli powder, ¾ tsp pepper and pinch of hing.
- saute on low flame without burning the spices.
- further, add roasted peanuts and ¼ tsp salt.
- saute for a minute, or until the masala is coated well.
- transfer the masala peanuts into the bowl.
- crush the curry leaves, congress kadlekai is ready. store them in an airtight container, or prepare masala peanuts chaat.
- to prepare chaat, add 2 tbsp onion, 2 tbsp tomato, 2 tbsp carrot, 2 tsp coriander, 1 tsp lemon juice and ¼ tsp salt.
- mix well making sure all the vegetables are mixed well.
- finally, enjoy raja special / masala peanut chaat as a snack.
notes:
- firstly, roast the peanuts on low flame, else it will not be crunchy.
- also, adjust the amount of spice to your choice.
- additionally, use store brought roasted peanuts if you want to skip the roasting part.
