i have posted quite a few peda recipes, including the latest besan peda, but this recipe is one of the simplest of all. in other words, it is not only a healthy alternative but also a simple one made with just 2 ingredients. the recipe tastes very similar to the modak recipe but in a very simpler way. moreover, i even felt that handing and shaping rice flour-based sweets are much easier compared to milk or besan. there is no headache of continuous stirring like in milk solids or no danger of burning the besan flour while roasting it. i personally like the dark coloured jaggery and hence used it in this recipe. it not only adds flavour but also gives a distinct colour and smell to the sweet. you may very well prepare it with normal jaggery or even sugar, but i would heavily recommend trying this jaggery once for any of your sweets recipe.

furthermore, i would also like to add some additional tips, suggestions and variations to the rice flour sweet recipe. firstly, i would heavily recommend using fine-textured rice flour for this recipe and it would be easy to handle and shape. moreover, you can also use leftover rice to prepare this sweet, but you may have to prepare a smooth paste out of it. secondly, if you wish to experiment, you may wrap this sweet with coconut powder coating or even sugar powder or dry fruits powder coating to make it a rich sweet. i personally like the basic one and hence i have skipped it. lastly, once the sweet is shaped, i would heavily recommend refrigerate these sweets for about 30 minutes so that it gets the smooth texture and also turn slightly harder.

Ingredients
  

  • 1 cup rice flour, fine
  • 1 cup jaggery
  • 1 cup water
  • 1 cup coconut milk
  • ¼ tsp cardamom powder
  • 2 tbsp ghee / clarified butter

Instructions
 

  • firstly, in a pan dry roast 1 cup rice flour.
  • roast on low flame until it turns aromatic. roasting prevents rice flour from turning sticky. keep aside.
  • in a large kadai take 1 cup jaggery and 1 cup water.
  • stir and dissolve the jaggery. i have used marayoor jaggery which is prepared from condensed sugar cane juice.
  • once the jaggery melts completely, add 1 cup coconut milk and mix well.
  • get the water to a rolling boil.
  • now add roasted rice flour to the mixture.
  • mix continuously until the mixture thickens.
  • mash the mixture smoothly making sure there are no lumps.
  • further, add ¼ tsp cardamom powder and 2 tbsp ghee.
  • mix well and cook for a minute forming a glossy peda mixture.
  • transfer the mixture to a bowl and cool slightly.
  • when the mixture is still warm, start preparing peda.
  • also using a peda design mould, design to your choice.
  • refrigerate the peda for 1 hour before serving.
  • finally, enjoy rice peda garnished with nuts if required.

  • also, you can add khoya to make the peda rich and flavourful.
  • additionally, cook on low flame until the mixture holds the shape forming a non-sticky mixture.
  • finally, rice peda recipe stays good for a week when refrigerated.
