Firstly, the vibrant flavor of dill leaves just elevates the curry to the next level. Particularly when mixed with soaked moong dal, it feels so simple and earthly. Typically, this curry is served with Bakri or Jowar roti, but not limited to. I make this often and serve it as a side dish to dal rice for lunch and a simple curry for roti and chapati at night. Secondly, this recipe hardly takes 5 to 10 minutes once the moong dal is soaked. So if you are running short on ideas for lunch and dinner. This dill bhaji curry can be a lifesaver. Avoid using frozen dill leaves as they may not carry the same fragrance. Also, with the stem, finely chop it so that easily blend with the leaves. Secondly, with dill leaves, you may add other types of leafy vegetables. Perhaps adding palak or methi leaves can certainly be a healthy option. Lastly, do not overcook the leaves. Ingredients
  

  • 1 bunch dill leaves / shepu / suva / sabsige, chopped
  • ½ cup moong dal, soaked 30 minutes
  • 2 tbsp oil
  • 1 tsp mustard
  • ½ tsp cumin
  • 3 chilli, finely chopped
  • pinch hing
  • 1 onion, chopped
  • ½ tsp turmeric
  • ½ tsp salt
  • ½ cup water

Instructions
 

  • Firstly, in a large kadai heat 2 tbsp oil. Add 1 tsp mustard, ½ tsp cumin, 3 chilli, pinch hing and splutter on medium flame.
  • Add 1 onion and saute until the onion softens.
  • Also add ½ tsp turmeric, ½ tsp salt and saute until the spices turn aromatic.
  • Now add in ½ cup soaked moong dal and stir fry until the dal turns aromatic. Make sure to soak the moong dal for 30 minutes and drain off the water before adding.
  • Add in 1 bunch chopped dill leaves and saute for 2 minutes.
  • Further add ½ cup water and mix well.
  • Cover and simmer for 10 minutes or until the dal is cooked well.
  • Finally, enjoy Shepu Bhaji Recipe with roti or rice.

  2. Add 1 onion and saute until the onion softens.
  3. Also add ½ tsp turmeric, ½ tsp salt and saute until the spices turn aromatic.
  4. Now add in ½ cup soaked moong dal and stir fry until the dal turns aromatic. Make sure to soak the moong dal for 30 minutes and drain off the water before adding.

  6. Further add ½ cup water and mix well.
