An exceptionally tasty and spicy dry starter recipe prepared with a blend of spices with soya chunks. It is an ideal party starter or appetizer recipe which can also be extended as a dry curry recipe as a side dish to roti, chapati, or rice. It is basically an adapted version of its meat counterpart where the masala and spice mix is exactly the same but with juicy soya chunks.

These are generally served as side dishes to most lunch or dinner recipes, but not limited to it. Basically serving it as a simple evening snack is its main use case. One such easy and simple dry roast curry is Kerala Style Soya Roast known for its spicy and flavored masala paste.

As I was explaining earlier, this recipe is very much inspired by the meat or chicken, mutton roast recipe. As a matter of fact, the spice masala is exactly the same as the meat counterpart. Basically, the spice mix used for meat starters is typically loaded with spice heat and this recipe carries the same. Even the soya chunks have the same texture as meat and hence the masala easily blends with it. Also, the recipe is typically served as a starter but can be a fantastic side dish with Indian bread, especially the parotta. I personally avoid the soya chunks recipes, but certainly not this spicy recipe. I make this masala and use it for various other hero ingredients like mushrooms, paneer, and even soya cubes. Firstly, the soya chunks have to be thoroughly cleaned and washed before it is used. As matter of fact, you need to wash it cleanly for any soya-based recipes. Ingredients
  

for boiling soya:

  • cup soya chunks
  • water, for boiling
  • 1 tsp salt

for masala powder:

  • 1 tsp cumin
  • 1 tsp coriander seeds
  • 1 tsp pepper
  • 1 tsp fennel
  • 1 inch cinnamon
  • 4 pods cardamom
  • 4 cloves
  • 1 bay leaf
  • 2 tbsp dry coconut, sliced
  • 6 dried red chilli

for curry:

  • 2 tbsp oil
  • ½ onion, sliced
  • 5 cloves garlic, crushed
  • 1 tomato, chopped
  • ½ tsp turmeric
  • ½ tsp salt
  • 1 cup water
  • few capsicum, chopped
  • ½ tomato, cubed
  • few curry leaves
  • 2 tbsp tomato sauce
  • 2 tbsp coriander, chopped

Instructions
 

  • firstly, add 1½ cup soya chunks in boiling water along with 1 tsp salt.
  • boil for 10 minutes or until the soya softens.
  • drain off the water and rinse with cold water.
  • squeeze off the water and keep it aside.
  • to prepare the masala powder, in a pan take 1 tsp cumin, 1 tsp coriander seeds, 1 tsp pepper and 1 tsp fennel.
  • also add 1 inch cinnamon, 4 pods cardamom, 4 cloves, 1 bay leaf, 2 tbsp dry coconut and 6 dried red chilli.
  • dry roast on low flame until the spices turn aromatic.
  • cool completely, and grind to a fine powder. keep aside.
  • in a large pan heat 2 tbsp oil. saute ½ onion, 5 cloves garlic until it shrinks slightly.
  • further, add 1 tomato until it turns soft and mushy.
  • now add prepared masala powder, ½ tsp turmeric, ½ tsp salt and saute until the spices turn aromatic.
  • add in 1 cup water and mix well adjusting the consistency.
  • now add boiled soya and mix well.
  • furthermore, add few capsicum, tomato and curry leaves.
  • cover and simmer for 5 minutes or until the flavours are absorbed well.
  • give a mix and add 2 tbsp tomato sauce and 2 tbsp coriander.
  • finally, enjoy soya roast with roti or rice.

  • firstly, make sure to boil the soya chunks well. else they will not taste good.
  • also, the masala is very spicy. you can adjust the spiciness to your choice.
  • additionally, adding tomato sauce makes the curry tangy and tasty.
  • finally, soya roast recipe is slightly dry, however, you can make it gravy based.
