sprouts curry recipe | moong sprouts sabzi | sprouts recipe with detailed photo and video recipe. a healthy and nutritious spicy masala curry recipe prepared from green gram sprouts. this sprouts sabzi or sprouts gravy can be ideally served with roti, chapathi and even with rice for lunch and dinner.
i have shared quite a few simple indian curry recipes which include either paneer or any other vegetables. however this north karnataka style sprouts recipe is one of the simplest and healthiest curry recipes till now – hands down! moreover i have also shown in this post on how to grow sprouts in home. so the sprouts can also be used for salad and for soup. moreover with the same moong sprouts you can also prepare misal ussal pav – a traditional maharashtrian snack.
furthermore, i would like describe some tips and suggestions for perfect sprouts curry recipe. firstly, i have prepared and have cultivated the moong sprouts at home. however if you feel it is too much effort, then you should find the sprouts in any supermarket these days. secondly, you can add moth beans sprout, green peas sprout to moon beans sprout to prepare mixed sprouts curry. lastly, if you do not prefer to have gravy and dry sprouts curry then add water only to cook the sprouts.

Ingredients
- ¾ cup whole moong dal / green gram dal
- water for soaking
- 3 tsp oil
- 1 tsp mustard seeds / rai
- ½ tsp cumin / jeera
- pinch of hing / asafoetida
- 1 small onion, finely chopped
- 1 tbsp ginger-garlic paste
- 2 green chili, slit lengthwise
- 2 to matoes, finely chopped
- ½ tsp turmeric / haldi
- 1 tsp kashmiri red chili powder / lal mirch powder
- 1 tsp coriander powder / daniya powder
- ½ tsp garam masala powder
- ½ tsp dry mango powder / aamchur powder
- salt to taste
- ½ tsp jaggery
- 3 cups water, add as required
- 1 tbsp coriander leaves, finely chopped
Instructions
- firstly in a large kadai heat oil.
- further add mustard seeds, cumin and hing. allow to splutter.
- additionally, add onions and continue to saute.
- also add ginger garlic paste and green chili. saute well till the raw aroma disappears.
- furthermore, add tomato and saute well.
- saute till the tomatoes turn soft and mushy.
- additionally, add turmeric, chili powder, coriander powder, garam masala powder, dry mango powder, jaggery and salt.
- saute on low flame till the masala gets cooked well completely and releases oil from sides.
- further add sprouted moong dal.
- also add water and mix well.
- adjust the consistency by adding water as required.
- cover and simmer for 20 minutes or pressure cook for 2 whistles.
- cook the dal well however, do not over cook as the sprouts will loose their nutritional value.
- finally, serve sprouts curry along with jowar roti or rice.
how to make sprouts curry or sprouts recipe with step by step photo:
- firstly, soak whole moong dal in water for overnight.
- further drain off the water. tie the soaked moong dal in a cloth and hang overnight.
- next day, moong sprouts appear in the dal. keep aside.
- now in a large kadai heat oil.
- further add mustard seeds, cumin and hing. allow to splutter.
- additionally, add onions and continue to saute.
- also add ginger garlic paste and green chili. saute well till the raw aroma disappears.
- furthermore, add tomato and saute well.
- saute till the tomatoes turn soft and mushy.
- additionally, add turmeric, chili powder, coriander powder, garam masala powder, dry mango powder, jaggery and salt.
- saute on low flame till the masala gets cooked well completely and releases oil from sides.
- further add sprouted moong dal.
- also add water and mix well.
- adjust the consistency by adding water as required.
- cover and simmer for 20 minutes or pressure cook for 2 whistles.
- cook the dal well however, do not over cook as the sprouts will loose their nutritional value.
- finally, serve sprouts curry garnished with coriander leaves along with jowar roti or rice.
notes:
- firstly, use mixed sprouts to prepare mixed sprouts curry.
- further, add tomato pure instead of tomatoes to make gravy kinda sprouts curry.
- additionally, adjust the spices according to your taste.
- finally, overcooking sprouts will decrease the nutritional value of sprouts curry.

yes you should be able to try…
Can we soak all dals together for sprouting??
each dal has different sprouting time, hence i would recommend to do it separately.
