i have shared quite a few simple indian curry recipes which include either paneer or any other vegetables. however this north karnataka style sprouts recipe is one of the simplest and healthiest curry recipes till now – hands down! moreover i have also shown in this post on how to grow sprouts in home. so the sprouts can also be used for salad and for soup. moreover with the same moong sprouts you can also prepare misal ussal pav – a traditional maharashtrian snack.
furthermore, i would like describe some tips and suggestions for perfect sprouts curry recipe. firstly, i have prepared and have cultivated the moong sprouts at home. however if you feel it is too much effort, then you should find the sprouts in any supermarket these days. secondly, you can add moth beans sprout, green peas sprout to moon beans sprout to prepare mixed sprouts curry. lastly, if you do not prefer to have gravy and dry sprouts curry then add water only to cook the sprouts.

Ingredients
For pressure cooking:
- 2 cup moong sprouts
- ½ tsp turmeric
- ½ tsp salt
- 2 cup water
For curry:
- 2 tbsp oil
- 1 bay leaf
- 1 tsp cumin
- pinch hing
- 2 tbsp ginger garlic, chopped
- 2 onion, finely chopped
- ½ tsp turmeric
- 1 tsp chilli powder
- ½ tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tsp salt
- 2 tomato, finely chopped
- 2 tbsp coriander, finely chopped
Instructions
- In a pressure cooker, take 2 cups of moong sprouts, ½ tsp turmeric and ½ tsp salt.
- Also, add 2 cups of water and pressure cook for a whistle.
- Now, in a kadai, heat 2 tbsp oil. Add 1 bay leaf, 1 tsp cumin, and a pinch of hing, and sauté till the spices turn aromatic.
- Further, add 2 tbsp of ginger-garlic and sauté well.
- Also, add 2 onions and sauté until golden brown.
- Keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, 1 tsp coriander powder, 1 tsp garam masala and 1 tsp salt.
- Sauté on a low flame till the spices turn aromatic.
- Now add 2 tomatoes and cook until the tomatoes turn soft and mushy.
- Continue cooking until the oil separates from the sides.
- Add cooked sprouts and mix well, adjusting the consistency and salt.
- Simmer for 5 minutes, or until the flavours are absorbed well.
- Add in 2 tbsp coriander and mix well.
- Finally, enjoy Sprouts Curry Recipe with roti.
how to make sprouts curry or sprouts recipe with step by step photo:

notes:
- First, use mixed sprouts to make a curry.
- Further, add coconut masala paste to make a South Indian-style sabzi.
- Additionally, adjust the spices according to your taste.
- Finally, overcooking sprouts will decrease the nutritional value of Sprout Curry.

yes you should be able to try…
Can we soak all dals together for sprouting??
each dal has different sprouting time, hence i would recommend to do it separately.
