WHEAT FLOUR - 2 CUP

firstly, in a large bowl take 2 cup wheat flour, 1 tsp chilli flakes and ½ tsp salt. mix well

WATER - 1 CUP

add water as required and knead the dough

OIL - 2 TBSP

also, add 2 tbsp oil and continue to knead

TUCK DOUGH

also, add 2 tbsp oil and continue to knead

COVER & REST

cover and rest for 20 minutes

POTATO - 2 BOILED

meanwhile, to prepare the stuffing, in a large bowl take 2 potatoes.

CAPSICUM - HALF 

add 1 carrot, ½ capsicum, 5 tbsp cabbage, ½ onion and 2 tbsp coriander

CHAAT MASALA

also add ½ tsp chilli powder, ¼ tsp pepper powder, ½ tsp chaat masala, ½ tsp cumin powder and ½ tsp salt

MIX WELL

mix well making sure all the ingredients are well combined

KNEAD AGAIN

after the dough has rested for 20 minutes, knead again

LARGE BALL SIZED

pinch a ball sized dough and dust with wheat flour.

SLIGHTLY THICK

roll slightly thick, dusting with more atta if required

MIXTURE 

now spread 3-4 tbsp of prepared mixture uniformly. make sure to leave the sides

ROLL TIGHT

roll tight making sure the mixture is intact.

CUT PIECES

now cut into 2-inch pieces and flatten slightly.

SHALLOW FRY

fry in hot oil keeping the flame on low

FLIP OVER

make sure to fry on both sides by flipping in between

FRY GOLDEN BROWN

fry until the tikki turns golden brown and crisp. drain off over kitchen paper.

READY TO EAT

finally, enjoy veg roll tikki with tomato sauce or green chutney
