being a south indian, i have always been a huge fan of rice-based recipes. basically it is one of the must dish in our dining table. it can be a simple dal rice, to lemon rice to complicated spice rich biriyani recipe. i personally like flavoured rice like pulao, fried rice compared to simple dal rice or sambar rice. however, my husband likes it the old way. he prefers to have simple, rasam rice and coconut sambar rice combination for day to day lunch. but on weekends or on occasions, he likes spice rice, biriyani or loaded pulao recipe. hence i make generally make plain rice first, and serve it to him, and use the same rice to make some flavoured rice of my choice.

furthermore, i would like to add some more tips, suggestions and variations to masala pulav recipe. firstly, i would heavily recommend using basmati rice or any long grain rice for this recipe. you may even use sona masuri, but avoid using any other short-grain rice. secondly, do not overcrowd the recipe by adding more vegetables to it. basically the add some basic vegetables like potatoes, peas, onions and tomatoes to make it colourful. lastly, my personal favourite combination is with boondi raita, but you can serve it with choice of raita like onion, tomatoes and cumin. also, you can serve it with dal or curry variation.

Ingredients
  

  • 2 tbsp ghee / clarified butter
  • 1 inch cinnamon
  • 3 pod cardamom
  • 4 cloves
  • 1 bay leaf
  • ½ tsp fennel / saunf
  • 1 tsp cumin / jeera
  • 1 onion, finely chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 chilli, slit
  • ½ tsp turmeric
  • 1 tsp kashmiri red chilli powder
  • 1 tsp garam masala
  • 1 tsp kasuri methi
  • 1 to mato, finely chopped
  • 1 carrot, chopped
  • ½ potato, cubed
  • 3 tbsp peas / matar
  • 1 cup basmati rice, soaked 20 minutes
  • 2 tbsp coriander, finely chopped
  • 2 cup water
  • 1 tsp salt

Instructions
 

  • firstly, in a large kadai heat 2 tbsp ghee and saute 1 inch cinnamon, 3 pod cardamom, 4 cloves, 1 bay leaf, ½ tsp fennel and 1 tsp cumin. saute until spices turn aromatic.
  • now add 1 onion, 1 tsp ginger paste, 1 tsp garlic paste and 1 chilli.
  • saute well until onions change colour slightly.
  • keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp garam masala, 1 tsp kasuri methi.
  • saute on low flame until spices turn aromatic.
  • further, add 1 tomato and saute until tomatoes turn soft and mushy.
  • now add 1 carrot, ½ potato and 3 tbsp peas.
  • saute for a minute or until vegetables are coated well with the masala.
  • add in 1 cup basmati rice, 2 tbsp coriander and saute gently for a minute. make sure to soak basmati rice for 20 minutes.
  • pour 2 cup water and 1 tsp salt. mix well.
  • cover and simmer for 20 minutes or until rice gets cooked completely. you can alternatively, pressure cook for 2 minutes on medium flame.
  • finally, enjoy masala pulao with boondi raita.
