It is one of the popular choices for many south indians for morning breakfast or evening dinner. Generally, it is pre-mixed with all the spices and can therefore be served as is; however, it tastes great when accompanied by a spicy coconut chutney.

Roti recipes are widespread across India, but millet-based recipes are hugely popular with South indian. It is generally served for breakfast in the morning, but can be served at any meal. One such hugely popular and healthy south indian breakfast recipe is the ragi roti recipe, known for its taste and flavour.

Millet-based recipes are a popular choice for our day-to-day breakfast. We generally make idlis or dosas for our weekend breakfast, but we also enjoy millet-based recipes or even akki roti for weekday breakfast. These are healthy, but more importantly, quick and easy to make in no time. Moreover, last week I shared two ways of making akki roti, and I got many requests to post the ragi roti recipe. My previous post on finger millet roti was quite old, anyway, so I thought of posting it in two ways: one with the roti being patted on a tawa and the other with the help of banana leaves. I personally prefer to do the latter, but some people also prepare these rotis in a tawa. Hence, I thought it would be beneficial to share both recipes.

Furthermore, before concluding, some tips, suggestions and variations to the ragi roti recipe. Firstly, the dough has to be soft and easy to spread on any even surface. Hence, if your dough is stiff and cannot be spread, you can sprinkle some water to make it moist and soft. Secondly, I personally recommend using a banana leaf to tap and spread the roti. You may use baking paper, silver foil and even cling wrap for the same purpose. You may want to consider the tawa-based approach if you have two tawas, allowing them to be used alternately. Lastly, the ragi roti is spiced with herbs and onions, so you do not require any additional condiments. Yet you may very well serve it with a choice of coconut chutney or any chutney powder.

Ingredients
  

  • 2 cup ragi flour
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 2 chilli, finely chopped
  • 1 inch ginger, grated
  • 2 tbsp coriander, finely chopped
  • 2 tbsp dill leaves, chopped
  • few curry leaves, chopped
  • 2 tbsp sesame
  • ½ tsp cumin
  • pinch hing
  • ½ tsp salt
  • 2 tbsp coconut, grated
  • hot water
  • ghee / oil, for roasting

Instructions
 

  • Firstly, in a large plate, take 2 cup ragi flour, 1 onion, 1 carrot, 2 chilli, 1 inch ginger, 2 tbsp coriander, 2 tbsp dill leaves, few curry leaves,2 tbsp sesame, ½ tsp cumin, pinch hing, ½ tsp salt and 2 tbsp coconut.
  • Squeeze and mix well, ensuring everything is thoroughly combined.
  • Now pour hot water and mix well.
  • Squeeze and mix, making sure everything is well combined.
  • Now take a wet cloth. You can alternatively use butter paper or a banana leaf. If the banana leaf is not tender, heat it slightly and then grease it with oil.
  • Take a ball-sized dough and tap gently to a thin thickness.
  • Make four holes; this will help roast as we can add oil in the centre.
  • Now flip over to hot tawa and press gently, peel the cloth off.
  • Now add oil and roast both sides until they turn slightly golden.
  • Flip over once the base is cooked.
  • Finally, enjoy Ragi Rotti Recipe with coconut chutney.
