akki roti recipe with cooked rice | rice roti with left over rice | akki rotti with step by step photo and video recipe. an authentic and traditional delicacy from karnataka cuisine or kannda cuisine which is mainly prepared for breakfast. commonly it is prepared with fine rice flour stirred with boiling water and which is then rolled to thin flat bread. however, this is a shortcut way of preparing the same recipe with leftover rice and rice flour combination.

i have already shared the authentic and traditional akki rotti recipe mainly prepared from the rice flour. however i always wanted to share the akki roti recipe with cooked rice as most of the time i end up preparing this recipe compared to the former one. this recipe is more thrifty and economical just because you can prepare this for your breakfast with previous day leftover rice. further it tastes great with combination of coconut chutney and chutney pudi without much hassle for the side dish. however it tastes great with traditional brinjal curry or also known as ennegai recipe.

rice roti with left over ricewhile there isn’t much complicated steps in this akki roti recipe, yet some tips and suggestions for perfect one. firstly, i have used tap and roll method to roll the rotti’s with the bare hand. however if you are not comfortable, you can prepare the same with rolling pin too. secondly, i have not added any vegetables like, grated carrot, finely chopped onions, leafy vegetables like, dill leaves. you can add those if you do not prefer the plain rotis. lastly, i have cooked these rotis whit zero oil to make it healthy and traditional. optionally you can add 1-2 tsp of oil while kneading the dough and also while frying it.

Ingredients
  

  • 1 cup rice, cooked / leftover
  • ¼ cup water
  • 1 cup rice flour
  • salt to taste

Instructions
 

  • firstly, in a blender take 1 cup of cooked rice and ¼ cup water.
  • blend to smooth paste. transfer the rice paste to mixing bowl.
  • further add 1 cup rice flour and salt to taste.
  • combine well and prepare a dough.
  • knead to smooth and soft dough. add more rice flour or water if required.
  • pinch out a small ball sized dough and flatten it.
  • further, pat and flatten with the help of palm and finger.
  • also dust the work station with little rice flour to prevent roti from sticking while patting.
  • now pat gently with one hand and the other over side to get round shape. if you are beginner, then roll using rolling pin.
  • make sure to dust with rice flour if required.
  • further, with both the hands pat as thin as possible. alternatively use rolling pin.
  • also dust off excess flour from the roti.
  • furthermore, put the flattened dough onto the hot tawa.
  • now spread water over the roti with help of hand or wet cloth removing excess dough.
  • wait until the water evaporates then flip it to the other side.
  • press gently and cook all the sides.
  • finally serve rice roti / akki rotti with ennegai or dry garlic chutney.

notes:

  • firstly, add grated carrot or cabbage to make roti more nutritious and healthy.
  • also, make sure to knead the dough well else there will be cracks while patting rotti.
  • most noteworthy, if there are cracks forming while patting roti, take some hot water and knead the dough further.
  • finally, rice roti / akki rotti taste great when patted with hands rather then prepared with rolling pin.
