This recipe features a pasta dish topped with a creamy, rich eggless mayonnaise.

I am not a huge fan of mayonnaise pasta recipes, as I generally find them creamy and filling. Having said that, it is one of my husband’s favourite pasta recipes. And hence I have to prepare it frequently for him, and I make it for his lunch box. In this recipe, I have used eggless mayo, which is less creamy and less thick. If you are comfortable with egg-based mayo, it is more recommended. In addition to these, you can also use the other flavours of mayo, like aioli and garlic mayo. Personally, I prefer the simple and flavourless version, but it is completely up to individual preference.

Furthermore, I would like to add some tips and suggestions for a creamy mayonnaise pasta recipe. Firstly, this recipe uses penne pasta, and you can easily replace it with macaroni, ravioli, or even spaghetti. In addition, you can also mix and match with a choice of veggies as per your taste. Secondly, be very cautious after adding the mayo to the pasta. You need to switch off the flame after the mayo is added; otherwise, it may curdle due to heat. Lastly, as mentioned previously, try the same recipe with your choice or flavoured mayo for a different taste.

Ingredients
  

For boiling pasta:

  • water
  • 1 tbsp salt
  • 1 cup macaroni pasta

For mayo pasta:

  • 2 tsp oil
  • 1 tbsp butter
  • 5 cloves garlic, finely chopped
  • ½ onion, chopped
  • ½ capsicum, chopped
  • 2 tbsp sweet corn
  • ½ tsp mixed herbs
  • ½ tsp chilli flakes
  • ½ tsp salt
  • ½ cup eggless mayonnaise
  • 2 tbsp cheese

Instructions
 

  • Firstly, in a large pan, take enough water and bring it to a boil. Once the water comes to a boil, add 1 tbsp salt.
  • Add 1 cup of macaroni pasta and boil for 6 to 8 minutes. Refer to the package information to know the cooking time of pasta.
  • Once the pasta is cooked al dente, drain off. Also reserve half a cup of pasta-boiling water.
  • In a wok, heat 2 tsp oil and 1 tbsp butter, then sauté 5 cloves of garlic.
  • Also add ½ onion, ½ capsicum, 2 tbsp sweet corn and saute till the vegetables turn crunchy.
  • Now add ½ tsp mixed herbs, ½ tsp chilli flakes and ½ tsp salt. Stir fry till it turns aromatic.
  • Add ½ cup of the reserved pasta water and mix well.
  • Turn off the flame and add ½ cup eggless mayonnaise. Mix well till the sauce turns creamy.
  • Also, add 2 tbsp cheese and mix till the sauce turns creamy and cheesy.
  • Now add boiled pasta and mix well. Simmer for 2 minutes or till the pasta absorbs the sauce.
