I have posted several sweets till now, but as per my knowledge, most of them are sugar-based sweets or desserts. The reason I am mentioning this is that I started getting several requests for sweet recipes without sugar. I was planning to make Aate ki barfi with jaggery initially. But I thought of making a traditional recipe compared to a healthy alternative. Having said that usage of jaggery can be difficult sometimes, especially for a novice cook. Sugar syrup in most of the barfi recipes helps to give shape and strength to the sweets. Whereas jaggery may not necessarily contribute to the same effect. So you may need to be extra careful while shaping and handling these wheat barfi sweets.

Furthermore, I would like to conclude with some, tips, suggestions, and variations to the aate ki barfi recipe. Firstly, always use fresh and good quality wheat and chickpea flour to prepare these wheat barfi sweets. You are already using jaggery for the sweetness which does not cooperate while shaping, so you have to be extra careful with flour. Secondly, you can make the same barfi recipe with the same quantity of jaggery too. You may need to attain one-string consistency before attempting with jaggery. Lastly, you can make the same barfi recipe with your choice of flour. My recommendations would be to use maida, ragi, or a combination of wheat and plain flour.

An easy and simple traditional Indian sweet recipe made with a combination of wheat flour and chickpea flour with sugar syrup. Aate Ki Barfi or Wheat Burfi is a popular North Indian or Gujarati Cuisine particularly made during the winter season for extra calories. Ingredients
  

  • 1ยฝ cup atta / wheat flour
  • 1ยฝ cup besan
  • 1 cup ghee
  • 3 tbsp rava / semolina, fine
  • pinch saffron food colour
  • 1ยฝ cup powdered sugar
  • ยฝ tsp cardamom powder
  • 2 tbsp nuts, chopped

Instructions
 

  • Firstly, in a large kadai take 1ยฝ cup atta and 1ยฝ cup besan.
  • Dry roast for 5 minutes or until the flour turns aromatic.
  • Addย 1 cup ghee and start roasting.
  • Also, add 3 tbsp rava, pinch saffron food colour and roast on low flame.
  • Roast until the flour turns golden brown and ghee releases.
  • Cool the flour slightly by mixing continuously.
  • Once the mixture is slightly warm, addย 1ยฝ cup powdered sugar, ยฝ tsp cardamom powder andย 2 tbsp nuts.
  • Mix well making sure everything is well combined.
  • Further, transfer the mixture to the tray and level uniformly.
  • Top with nuts and allow to set.
  • Once the burfi has been set fully, cut to the required shape.
  • Finally, enjoy Aate Ki Barfi Recipe for a month when stored in an airtight container.
