well, i am not a huge fan of tambittu laddu recipe and i typically avoid it for my festival celebrations. i personally feel it is dry and also bit harder compared to the other moist and juicy ladoo recipe. having said that, this laddo is my husband’s personal favourite and i make these just to satisfy him. moreover, i started getting more and more requests from my readers during the shivaratri festival celebrations. and i realised that i haven’t posted this recipe yet even though the recipe is from my home state. anyway, i have do not have any reservations for the recipe as it is simple and easy compared to other traditional ones.

furthermore, some easy tips, suggestions and variations to make these akki thambittu recipe a perfect one. firstly, i have prepared the rice powder or rice flour using rice grains (sona masuri). this is the traditional way of making these ladoo, but for a quick turnaround, you can use store bought rice flour too. secondly, the recipe tastes great when made with jaggery syrup with one string consistency. having said that you can also make these with sugar syrup with same syrup consistency. lastly, these ladoo’s have a good shelf life when stored in an airtight container. it easily lasts long for a week, but you may have to heat it in a microwave for 10 seconds before serving.

Ingredients
  

  • 1 cup rice flour, fine
  • ½ cup putani / roasted gram dal
  • ½ cup peanuts
  • 2 tbsp sesame
  • ¼ cup dry coconut, grated
  • ¼ tsp cardamom powder
  • 2 tbsp ghee / clarified butter
  • 1 cup jaggery / gud
  • ¼ cup water

Instructions
 

  • firstly, in a tawa dry roast 1 cup rice flour.
  • transfer the roasted rice flour into a bowl.
  • add the powdered putani powder, crushed peanut powder to the bowl.
  • add in roasted sesame seeds, ¼ cup roasted dry coconut and ¼ tsp cardamom powder.
  • further, add 2 tbsp ghee, crumble and mix until the flour turns moist.
  • filter the jaggery syrup and add to the flour mixture.
  • mix well using the spoon until everything is well combined.
  • grease your hands with ghee and start preparing ladoo.
  • finally, thambittu recipe is ready to enjoy for 2 weeks.

  1. firstly, in a tawa dry roast 1 cup rice flour.

  3. transfer the roasted rice flour into a bowl.

  4. in the same tawa roast ½ cup putani on low flame.

  5. transfer to the blender and blend to smooth powder.

  6. add the powdered putani powder to the same bowl.

  7. in the tawa dry roast ½ cup peanuts until the skin starts to separate.

  8. peel off the skin and transfer to the blender.

  9. blend to a coarse powder and add to the bowl.

  10. further dry roast 2 tbsp sesame on low flame.

  11. add in roasted sesame seeds to the bowl.

  12. now dry roast ¼ cup dry coconut until it turns crisp.

  16. in a tawa take 1 cup jaggery and ¼ cup water.

notes:

  • firstly, be quick once jaggery syrup is added to the flour mixture. as it hardens when cooled.
  • also, you can add jaggery syrup in batches to avoid from hardening.
  • additionally, traditional thambittu is shaped into box shape to light lamp for pooja.
  • finally, thambittu recipe tastes great when prepared with homemade rice flour.
