i have posted several sweets till now, but as per my knowledge, most of them are sugar based sweets or desserts. the reason i am mentioning this is due to the fact that i started getting several requests for sweet recipes without sugar. as a matter of fact, i was planing to make aate ki barfi with sugar initially. but i thought of making a healthy alternative as i am already using wheat flour. having said that usage of jaggery can be difficult sometimes, especially for a novice cook. basically, sugar syrup in most of the barfi recipe helps to give shape and strength to the sweets. whereas jaggery may not necessarily contribute to the same effect. so you may need to be extra careful while shaping and handling these wheat barfi sweets.
furthermore, i would like to conclude with some, tips, suggestions and variations to the aate ki barfi recipe. firstly, always use fresh and good quality of wheat flour to prepare these wheat barfi sweets. as you are already using jaggery for the sweetness which do not cooperate while shaping, so you have to be extra careful with flour. secondly, you can make the same barfi recipe with the same quantity of sugar too. you may need to attain one string consistency before attempting with sugar. lastly, you can make the same barfi recipe with your choice of flour. my personal recommendations would be to use maida, ragi or combination of wheat and plain flour.

Ingredients
- ½ cup (100 grams) ghee / clarified butter
- 1 cup (160 grams) wheat four / atta
- ¼ tsp cardamom powder
- ½ cup (120 grams) jaggery / gud, powdered
Instructions
- firstly, in a large kadai take ½ cup ghee.
- roast 1 cup wheat flour on low flame.
- keep roasting on low flame until the flour turns aromatic.
- the flour turns golden brown after 20 minutes.
- take off the kadai and cool for 1 minute.
- when the flour is still warm add ¼ tsp cardamom powder and ½ cup jaggery.
- mix well until the jaggery melts and combined well. the heat of wheat flour is enough for jaggery to melt.
- do not over mix as it cools and will be difficult to set.
- transfer the mixture to a greased tray and set to a block.
- rest for 15 minutes or until it sets well.
- cut to square pieces with sharp knife.
- finally, enjoy aate ki barfi or store in an airtight container for a week.
