stuffed idli recipe | aloo masala stuffed rava idli | potato stuffed idli with detailed photo and video recipe. a unique and innovative south indian breakfast idli recipe made with sooji and aloo masala. it has the same characteristics as masala dosa where spiced and cooked aloo masala is stuffed inside the idli before it is steamed to cook. unlike the traditional idli recipes, these do not require any additional side dish like chutney or sambar as it already contains inside it.
well to be honest, i never prepare this idli with the intention of preparing stuffed idli. i only end up preparing this recipe when i some leftover aloo masala or some idli batter and the demand is to make something innovative. i generally never get bored with idli but after preparing it for 2-3 days in a row, i seek some change to the idli recipe. as matter of fact, the potato-based filling is an ideal choice, but you may stuff any leftover dry sabzi like gobi, lauki, kaddu or even bean stir fry. in addition, the craving for a side dish depends upon the spice level of the stuffing. spicier the stuffing less demand for the side dish for this idli. you may add additional podi powder topping on top of these idlis to make them more colourful and flavoured.
furthermore some more additional tips, suggestions and variations to the stuffed idli recipe. firstly, there is no strict requirement for the rava or sooji based idli batter for this recipe. any type of idli batter which yields simple idli’s can be used for this recipe. i choose rava idli because you may use it to make an instant idli recipe. secondly, i have used idli stand to prepare these disc-shaped idlis and you may have to be careful while placing the aloo stuffing on top of the first idli batter layer. try to add minimum quantity in the first batch so that it does not spill. lastly, as an alternative to idli stand, you may use steel cups or steel glass. this would make it easier to stuff the masala between the idli batter.

Ingredients
for aloo masala:
- 2 tsp oil
- 1 tsp mustard
- ½ tsp cumin
- 1 tsp chana dal
- pinch hing
- few curry leaves
- ½ onion, finely chopped
- 2 chilli, finely chopped
- ½ tsp ginger paste
- ½ tsp turmeric
- ½ tsp salt
- 3 potato, boiled & grated
- 2 tbsp coriander, finely chopped
for rava idli:
- 2 tsp oil
- 1½ cup rava / semolina / suji, coarse
- ½ tsp salt
- ¾ cup curd
- 1 cup water
- ½ tsp eno / fruit salt
Instructions
how to make aloo masala stuffing:
- firstly, in a large kadai heat 2 tsp oil and splutter 1 tsp mustard, ½ tsp cumin, 1 tsp chana dal, pinch hing and few curry leaves.
- add ½ onion, 2 chilli and ½ tsp ginger paste.
- saute slightly until the onions shrink.
- now add ½ tsp turmeric and ½ tsp salt. saute for a minute until the raw flavour of turmeric goes away.
- add 3 potato and mix well.
- mix and mash until everything is well combined.
- further, add 2 tbsp coriander and mix well. aloo masala stuffing is ready. keep aside.
how to make rava idli:
- firstly, in a pan heat 2 tsp oil and roast 1½ cup rava.
- roast until the rava turns aromatic.
- cool completely and transfer to a large bowl.
- add ½ tsp salt and ¾ cup curd. mix well.
- add 1 cup water or as required and mix to form idli batter consistency batter.
- rest for 10 minutes, or until the rava absorbs the water.
- further, add ½ tsp eno and 2 tbsp water.
- mix gently, forming a frothy idli batter.
- fill half the greased idli mould with idli batter.
- place a small ball sized aloo masala. make sure to adjust the size of aloo masala based on the size of idli stand.
- cover the aloo masala with idli batter.
- cover and steam for 15 minutes or until the idli is cooked completely.
- finally, enjoy stuffed idli with chutney or as it is.
