pakora or bajji recipes are very common deep fried snack recipes and are made with a wide variety of vegetables. most of the pakora or bajji recipes end up being a spicy or savoury snack, but this recipe of banana bajji is unique. it is a combination of both sweet and savoury as it is made with almost ripe or raw banana plantain. you may not find the sweetness with raw banana but the sweetness is evident with an almost ripe banana. i personally liked the ripe banana fritters, but i have used raw one as it is easy to peel and slice it for the fritters. moreover, i am sceptical about the sweet & savoury combo snack and may not be liked by everyone, hence i went with the safe approach.

furthermore, some important tips and suggestions and tips for a perfect banana bajji recipe or aratikaya bajji. firstly, in this recipe, i have used just besan flour with a quarter amount of rice flour. rice flour helps to attain crispiness which can be replaced with cornflour if you are running short with rice flour. secondly, if you end up having leftover besan batter after deep frying raw banana, you can use it for preparing aloo and even paneer or onions. lastly, do not deep fry these fritters in a low flame and deep fry these in medium flame. it has to be evenly cooked and hence high flame or low cooking is not an option.

Ingredients
  

  • 1 raw plantain / raw banana
  • ¾ cup besan / gram flour
  • 2 tbsp rice flour
  • ¼ tsp turmeric
  • ½ tsp kashmiri red chilli powder
  • pinch hing / asafoetida
  • ¾ tsp salt
  • ½ cup water
  • ¼ tsp baking soda
  • oil for frying

Instructions
 

  • firstly, peel the skin of raw plantain.
  • slice them slightly thick. you can also slice them in round shapes.
  • soak them in water to prevent from browning.
  • meanwhile, prepare the besan batter by taking ¾ cup besan, 2 tbsp rice flour in a small mixing bowl.
  • also add ¼ tsp turmeric, ½ tsp chilli powder, pinch hing and ¾ tsp salt.
  • mix well making sure the spices are combined well.
  • further, add ½ cup water and whisk well.
  • prepare a smooth lump free batter.
  • now add ¼ tsp baking soda and mix gently.
  • pat dry the soaked plantain slices to remove excess moisture.
  • dip the sliced plantain slices into batter. coat with batter on both side.
  • slowly drop into hot oil and deep fry. stir occasionally.
  • fry until they become crisp and golden brown.
  • remove the pakodas and drain onto a paper towel.
  • finally, enjoy banana bajji with pudina chutney and masala chai.

notes:

  • firstly, increase the amount of chilli powder to make it spicier.
  • also, frying on medium flame makes your aratikaya bajji crispy and tasty.
  • additionally, wipe the plantain with a cloth before you use to prepare pakodas. else the water content present makes oil to splutter.
  • finally, rice flour can be replaced with corn flour to make banana bajji crispy and tasty.
