bhindi fry recipe | bhindi ki sabzi | bhindi masala dry | okra fry recipe with detailed photo and video recipe. a simple dry okra masala recipe ideal for roti, chapathi and also for rice as a side dish for lunch and dinner. basically the ladies finger are chopped and then stir fry with onion and tomatoes with dry spices like garam masala and amchur etc.
i have shared quite a few bhindi recipes till now which also includes bhindi masala gravy which is wet or gravy version of this recipe. i prepare bhindi fry recipe quite often compared to the gravy one as it is less hassle and quick to prepare. further, bhindi fry not just an amazing side dish to roti, my husband likes it with hot steamed rice too. he just mixes both rice and bhindi masala dry and tops with a drop of ghee and asks nothing further. also i try this recipe with frozen cut bhindi, but i make sure to de-frost them before using.
while there aren’t any complicated steps in this recipe, but still i would mention some do’s and dont’s for bhindi ki sabzi recipe. firstly, make sure to wash the fresh okra’s before using it in this sabzi. once washed do not forget to dry them in a cloth otherwise any moisture would release the sticky latex while stir frying. secondly, i have added finely chopped tomatoes in this recipe with onions. if you do not prefer tomatoes, it can be completely ignored. lastly, i personally recommend to use a non stick kadai for this bhindi masala dry as it does not stick to bottom easily.

Ingredients
- 3 tbsp oil
- 10 okra / bhindi / ladies finger, chopped
- ½ tsp cumin / jeera
- 1 onion, thinly sliced
- pinch of hing / asafoetida
- 1 tsp ginger-garlic paste
- 1 green chilli, slit
- 2 to mato, finely chopped
- ½ tsp turmeric / haldi
- ½ tsp kashmiri red chilli powder / lal mirch powder
- salt to taste
- ½ tsp coriander powder
- ½ tsp aamchur powder / dry mango powder
- 1 tsp kasuri methi / dry fenugreek leaves
- ¼ tsp cumin powder / jeera powder
- ½ tsp garam masala powder
- 1 tbsp coriander leaves
Instructions
- firstly, in a large kadai heat oil.
- further add chopped okra.
- coat well with oil and spread the bhindi.
- stir occasionally, making sure the bhindi gets cooked well from all the sides.
- also fry till the bhindi turn slight golden brown.
- transfer to a plate and keep aside.
- further saute cumin and hing till they turn aromatic.
- additionally add onion and continue to saute.
- also add ginger-garlic paste and green chilli. saute well.
- furthermore, add tomato and saute till they turn soft and mushy.
- now add spices and salt to taste.
- saute on low flame till the spices gets cooked well.
- add in fried okra and mix gently.
- cover and simmer for 3 minutes.
- also add in garam masala powder and crushed kasuri methi.
- finally, serve bhindi fry recipe or bhindi ki sabzi garnished with few coriander leaves.
how to make bhindi ki sabzi with step by step photo:
- firstly, in a large kadai heat oil.
- further add chopped okra. make sure to wipe off bhindi well before chopping, else will turn sticky.
- coat well with oil and spread the bhindi.
- stir occasionally, making sure the bhindi gets cooked well from all the sides.
- also fry till the bhindi turn slight golden brown.
- transfer to a plate and keep aside.
- further add oil if required and saute cumin and hing till they turn aromatic.
- additionally add onion and continue to saute.
- also add ginger-garlic paste and green chilli. saute well.
- furthermore, add tomato and saute till they turn soft and mushy.
- now add ½ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder, ½ tsp aamchur powder, ¼ tsp cumin powder and salt to taste.
- saute on low flame till the spices gets cooked well.
- add in fried okra and mix gently.
- cover and simmer for 3 minutes or till the okra absorb masala.
- also add in garam masala powder and crushed kasuri methi.
- finally, serve bhindi fry recipe or bhindi ki sabzi garnished with few coriander leaves.
notes:
- firstly, use tender bhindi for more rich flavour and taste.
- also adjust the spices based on your spice level.
- additionally, add sambar powder to give south indian style touch.
- finally, fry the bhindi on medium flame so that bhindi fry taste great.
