brinji rice recipe | vegetable brinji | veg brinji | brinji sadam with detailed photo and video recipe. an authentic and traditional rice-based recipe from the popular tamil cuisine. it is a well known one-pot meal from tamilnadu made from jeerga rice, coconut milk, choice of veggies and whole spices. the recipe is ideal to be served as a lunch box dish but can also be made for celebrations and occasions lunch and dinner.
well, to be honest, i wasn’t aware of this recipe till recently. i was invited by one of my tamil friends for the krishna janmashtami feast and she had made this brinji rice recipe for the main meal. i was very surprised with the name and also the way the recipe was made. basically it is a combination of biryani spices and the goodness of coconut milk. so basically when spice and milk meet together with rice, it ends up being an amazing one-pot meal. since the introduction of this recipe, i have already made it twice for my husband’s lunch box and trust me he is a happy man. the best part of this recipe is it does not require any other side dish with it. you may serve with raita but not mandatory.
anyway, some of the tips, suggestions and variations for a perfect brinji rice recipe. firstly, i have used simple long grain basmati rice to make the brinji rice. as an alternative, you can make it with jeerga samba rice for an authentic tamil flavour. secondly, while grounding the herbs and spice, i have limited to just water for the wet ingredient. you can also use grated coconut and ground it to smooth paste. lastly, adding vegetables to the recipe is completely open-ended and you can choose your desired flavour. but while selecting make sure to limit the number of vegetable variations in it.

Ingredients
for masala paste:
- handful coriander
- handful mint / pudina
- 2 pods cardamom
- 4 clove
- ½ inch cinnamon
- 1 tsp fennel / saunf
- 2 tbsp water
other ingredients:
- 2 tbsp ghee / clarified butter
- 1 tbsp oil
- 4 bay leaf / tej patta / brinji ilai
- 1 star anise
- 2 pods cardamom
- 1 onion, sliced
- 1 tsp ginger garlic paste
- 3 chilli, slit
- 1 tomato, chopped
- ½ carrot, chopped
- 2 tbsp peas / matar
- ½ potato / aloo, cubed
- 7 florets cauliflower / gobi
- 5 beans, chopped
- 1 tsp salt
- few curry leaves
- 1 cup water
- 1 cup coconut milk
- 1 cup basmati rice, soaked 20 minutes
- 2 tbsp coriander. chopped
- 2 tbsp mint / pudina, chopped
Instructions
- firstly, prepare the masala paste by taking handful coriander, handful mint, 2 pods cardamom, 4 clove, ½ inch cinnamon, 1 tsp fennel in a blender.
- blend to smooth paste adding 2 tbsp water.
- now in a cooker heat 2 tbsp ghee and 1 tbsp oil.
- add 4 bay leaf, 1 star anise, 2 pods cardamom and saute until it turns aromatic.
- further add 1 onion followed by 1 tsp ginger garlic paste and 3 chilli. saute well.
- also add 1 tomato and saute until tomato turn soft and mushy.
- now add ½ carrot, 2 tbsp peas, ½ potato, 7 florets cauliflower, 5 beans and 1 tsp salt.
- saute for a minute until vegies turn aromatic.
- additionally, add in prepared masala paste and few curry leaves.
- continue to saute for a minute until raw flavour disappears.
- pour 1 cup water and 1 cup coconut milk. mix well and get to a rolling boil.
- further add 1 cup basmati rice (soaked 20 minuteand give a good stir.
- spreadingly add 2 tbsp coriander and 2 tbsp mint.
- cover and pressure cook for 2 whistles on medium flame.
- finally, cool slightly and enjoy brinji rice with raita.

notes:
- firstly, instead of green chilli you can add chilli powder to get different coloured.
- also, adding coconut milk will enhance the flavour.
- additionally, add veggies of your choice or totally skip it to prepare plain brinji rice.
- finally, brinji rice recipe tastes great when served at least after an hour of preparation.
