well, to be honest, i am not a huge fan of baking cookies at home and i personally like to buy it from local bakeries. but i always get a lot of requests to make some homemade baked biscuits or cookies recipes. particularly i get for more of eggless recipes as most of the store bought do contain egg in it. traditionally egg yolks are added to cake or cookie batter to make it moist, creamy and also to hold the shape. the same can be achieved by adding ingredients like baking soda and baking powder. to be honest, i feel these artificial agents may not be the same match to egg yolks. but still a great alternative to making an eggless coconut cookies recipe.
furthermore some important tips and suggestions with variations to make a perfect coconut cookies recipe. firstly, in this recipe, i have used wheat flour to make it a healthy biscuit recipe. but from a taste wise, it tastes great when made with plain flour or maida atta. secondly, i have baked these cookies in old pressure cooker and not in a traditional oven. while you can bake it oven or otg at 180 degree celcius for 15 minutes, but if you are using the cooker, use old and not new pressure cooker. potentially you may spoil the cooker and hence use accordingly. lastly, do not use freshly grated coconut for this recipe and use desiccated coconut as directed. it should be dry and moisture free while mixing it with cookie batter.

- ½ cup 110 grams butter, softened
- ½ cup 110 grams sugar
- 1 cup 160 grams wheat flour / atta
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 cup desiccated coconut
- 3 tbsp milk
- 1 tsp vanilla extract
for baking in cooker:
- 1½ cup salt / sand
Instructions
- firstly, in a large mixing bowl take ½ cup butter and ½ cup sugar.
- beat for 2 minutes or until the mixture turns creamy.
- now sieve 1 cup wheat flour, ½ tsp baking powder, ¼ tsp baking soda and ¼ tsp salt.
- add 1 cup desiccated coconut.
- beat and combine the flour with butter mixture.
- furthermore, add 3 tbsp milk and 1 tsp vanilla extract.continue to beat and mix until the mixture is combined well.
- cookie dough is ready, cover and refrigerate for 30 minutes.
- pinch a ball sized dough and flatten slightly.
- place the cookie dough over the plate giving good space in between.
- now cover and cook on medium flame for 15 minutes. you can alternatively, preheat and bake at 180 degree celsius for 15 minutes.
- finally, store the coconut cookies in an airtight container and enjoy for a week.

- now place a sieve and add 1 cup wheat flour. you can also use maida.
- also, add ½ tsp baking powder, ¼ tsp baking soda and ¼ tsp salt.
- sieve the flour making sure there are no lumps.
- now add 1 cup desiccated coconut. you can reduce the amount of coconut if you do not prefer the strong flavour of coconut.
- beat and combine the flour with butter mixture.
- furthermore, add 3 tbsp milk and 1 tsp vanilla extract.
- continue to beat and mix until the mixture is combined well.
- bring the mixture together, without kneading the dough.
- cookie dough is ready, cover and refrigerate for 30 minutes.
- to prepare cookie in a pressure cooker add in 1½ cup of salt and place a small cup or cooker rack. also, place a plate above it.
- close the lid of cooker without keeping the gasket and whistle. heat for 5 to 10 minutes. as a result, gives a preheat oven atmosphere.
- now pinch a ball sized dough and flatten slightly.
- place the cookie dough over the plate giving good space in between.
- now cover and cook on medium flame for 15 minutes. you can alternatively, preheat and bake at 180 degree celsius for 15 minutes.
- the cookie will be soft initially. cool completely and the eggless coconut cookie turns crisp and crunchy.
- finally, store the coconut cookies in an airtight container and enjoy for a week.
notes:
- firstly, use brown sugar in place of white sugar for more chewy texture.
- also, you can add chocolate chips to prepare chocolate coconut cookies.
