Even though all my traditional paneer recipes are highly optimized with a quick and easy turnaround. Yet I am posting a new way of preparing the paneer masala curry that can be attempted by any new or beginner cook. Basically, I added all the gravy-making vegetables like tomato, onion, and garlic to the pressure cooker and mash it into gravy paste. In addition, all the supporting spices are added and pressure cooked, so no hassle of sauteing the spices. However, I have not added paneer cubes to the pressure cooking process as it would melt to form a bhurji. Firstly, I have prepared this recipe with basic gravy vegetables, but you may explore the other traditional paneer curries the same. Perhaps, you may attempt, matar paneer, paneer butter masala, palak paneer, and even kadai paneer. Secondly, the paneer used for this recipe is homemade paneer cubes which makes the curry more flavored and juicy paneer cubes. However, you may try the store-bought paneer too, but do check the expiry date for the best result. Lastly, if you wish to have thicker gravy, then you saute finely chopped onions with paneer and add it to the gravy. You may have to also add more spices to balance the taste and flavor.
