Paneer Pancake Recipe | Paneer Nutri Roastie | Paneer Pan Cakes with detailed photo and video recipe. An extremely healthy and filling savoury pancake recipe made with cottage cheese, vegetables & semolina. It is basically an extension to the popular Veggie Nutri pancake with additional paneer grate stuffing with vegetables. It can be an ideal morning breakfast recipe, especially for kids if not for adults and can be ideally served with a choice of spicy dips or chutney recipes.

Paneer Pancake Recipe | Paneer Nutri Roastie | Paneer Pan Cakes with step-by-step photo and video recipe. Pancakes or Nutri Roastie recipes are always a popular choice, especially for fussy eaters. It is basically a combination of vegetables and a choice of meat to make it a filling and nutritious breakfast recipe. However, it can also be extended with our own favourite paneer crumbles as a protein alternative to meat to prepare a healthy paneer pancake recipe.

As I was explaining earlier, this recipe is an extension of my previous vegetable pancake recipe. After posting my veggie pancake Nutri, I got a lot of requests for paneer-based pancake recipes. Adding paneer not only makes it creamy rich but also makes it filling and rich in protein. We all know that paneer is the best protein alternative for non-meat eaters or vegetarians. Generally, paneer is used in most curry recipes, but it can also be used for breakfast recipes. Moreover, I have served this recipe with spicy green chutney and red chutney which makes it an ideal combo. However, it is loaded with all the spices and therefore can be served as it is without any sides. Do try this recipe and let me know if you like this variant.

Paneer Pancake Recipe Furthermore, some more related and additional tips, suggestions and variants to the paneer pancake recipe. Firstly, I have used freshly prepared paneer grate for this recipe which makes it fresh and tasty. I would also recommend using fresh homemade paneer for this recipe, however, you may also use store-bought firm paneer. Secondly, I have used a small-sized pancake pan for this recipe which basically helps to shape it. You may use an appam pan or even a dosa pan to cook these Nutri Roasties. Lastly, if you are comfortable with meat, you may also add meat grate with paneer to make it a meat paneer pancake.

Ingredients
  

for suji batter:

  • 1 cup rava / suji / semolina, coarse
  • ¾ cup curd
  • ½ tsp salt
  • ½ cup water
  • ½ tsp eno fruit salt

for paneer mixture:

  • 2 tbsp oil
  • ½ onion, finely chopped
  • 1 carrot, chopped
  • 2 tbsp peas
  • 2 tbsp sweet corn
  • 2 tbsp capsicum, chopped
  • ½ tsp pepper powder
  • ½ tsp chilli flakes
  • ½ tsp salt
  • 1 cup paneer, grated

Instructions
 

  • firstly, in a bowl take 1 cup rava, ¾ cup curd, and ½ tsp salt.
  • mix well making sure everything is well combined.
  • add ½ cup water and mix making sure there are no lumps.
  • cover and rest for 10 minutes.
  • meanwhile, in a pan heat 2 tbsp oil. saute ½ onion until it shrinks slightly.
  • add 1 carrot, 2 tbsp peas, 2 tbsp sweet corn, and 2 tbsp capsicum.
  • stir fry keeping the vegetables crunchy.
  • now add ½ tsp pepper powder, ½ tsp chilli flakes, and ½ tsp salt.
  • also, add 1 cup paneer and mix well.
  • cool the paneer mixture and transfer it to the suji batter.
  • mix well making sure everything is well combined.
  • further, add ½ tsp eno fruit salt and 3 tbsp water.
  • mix well forming a smooth idli consistency batter.
  • take a pan and heat 2 tsp oil and add paneer roastie batter spreading uniformly.
  • cover and simmer for 2 minutes or until the base is roasted well.
  • flip over and roast on medium flame.
  • finally, enjoy the paneer roastie with chutney or sauce.
