As I mentioned previously, there are many ways and variations to this simple tomato soup recipe. But in this recipe, I have basically adopted the indian version or perhaps the version you usually order in restaurants. The recipe’s key ingredient is ripe tomatoes which I have sautéed with onions and carrots which are later ground to a fine and smooth paste. The reason I have added carrot to this recipe is for the creamy texture, and bright color it brings, and also for the sweet taste. Typically in restaurants, you may find it dark red color perhaps due to the addition of red food color. Also as the final step, I have added fresh and thick cream to make it a more creamy and silky texture. In addition, if the tomatoes are sour in taste, the addition of cream and carrots helps to balance the taste.

Secondly, you can also add corn starch in the place of carrot to attain the same consistency and texture. I personally like this to keep more natural with carrots rather than corn starch. Lastly, I was running out of toasted bread or rusk and hence I have not included it in the final presentation. But as a variation tomato soup tastes great when served with butter-toasted bread.

Ingredients
  

  • 1 tsp butter
  • ½ onion, finely chopped
  • 2 clove garlic
  • 1 bay leaf / tej patta
  • 3 tomato, chopped
  • ½ carrot, chopped
  • ½ tsp salt
  • 1 cup water
  • 1 tsp sugar
  • ½ tsp pepper, crushed
  • 2 tbsp cream / malai

Instructions
 

  • Firstly, in a kadai heat 1 tsp butter and saute ½ onion, 2 clove garlic and 1 bay leaf.
  • Sdd 3 tomato, ½ carrot chopped and ½ tsp salt.
  • Saute for a minute or till tomatoes change colour.
  • Add ½ cup water, cover and boil for 10 minutes.
  • Boil till tomatoes turn soft and mushy.
  • Now remove the bay leaf and cool the mixture.
  • Blend to smooth paste without adding any water.
  • Now sieve the tomato paste discarding the residue.
  • Add ½ cup water or more adjusting consistency.
  • Get the soup to a boil and add 1 tsp sugar, ½ tsp pepper and ¼ tsp salt.
  • Mix well making sure all the spices are combined well.
  • Turn off the flame and add 2 tbsp cream, mix well.
  • Finally serve creamy tomato soup garnished with mint leaf and cream.
