i have always been a huge fan of deep-fried snacks recipe. perhaps, i developed the taste from my college days. those crispy patti samosa’s, pakora or even the vada pav was my all-time favourite. to be honest these deep-fried snacks are just good to taste. they do not add any nutrients to your meal but are certainly filling. but only after starting this blog, i started to explore some healthy snacks recipes. well technically this snack is deep-fried yet i would term it as a healthy one. just because of the use of multiple vegetables in it and more importantly, it is shaped like kebab which would soak less oil. hence i would certainly recommend you to try this once and serve it to friends and family.

furthermore, i would like to add some additional tips, suggestions and variations to the veg crispy restaurant-style. firstly, the shape is not important for this snack and it is shaped like a kebab to make it attractive. you may shape it like a disc, cylindrical cube, or any desired shape using a shaper. secondly, i have used breadcrumbs to coat the snack which would make it crisp and flaky. yet you can use other alternatives like rava, corn flakes or even dry noodles to make it crispy. lastly, i prefer these to be deep-fried as it gives an even golden colour to the snack, but you may pan-fry or shallow fry too. also do not overcrowd while deep frying and give sufficient space so that it can be easily fried.

Ingredients
  

for vegetable mixture:

  • 2 tsp oil
  • 2 chilli, finely chopped
  • ½ tsp chilli flakes
  • ½ onion, finely chopped
  • 1 carrot, finely chopped
  • 5 beans, finely chopped
  • 3 tbsp sweet corn
  • ½ capsicum, finely chopped
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • 1 tsp aamchur
  • ½ tsp garam masala
  • ½ tsp salt
  • 3 potato, boiled & mashed
  • 2 tbsp paneer, grated
  • 2 tbsp coriander, finely chopped
  • ¼ cup bread crumbs

for slurry:

  • 1 cup maida
  • ½ cup corn flour
  • ¼ tsp pepper powder
  • ¼ tsp salt

other ingredients:

  • 1 cup bread crumbs, panko
  • oil, for frying

Instructions
 

  • firstly, in a pan heat 2 tsp oil, 2 chilli and ½ tsp chilli flakes. saute slightly.
  • now add ½ onion and saute until the onions sweat.
  • further add 1 carrot, 5 beans, 3 tbsp sweet corn and ½ capsicum.
  • saute for a minute without overcooking the vegetables.
  • keeping the flame on low add ½ tsp cumin powder, ½ tsp coriander powder, 1 tsp aamchur, ½ tsp garam masala and ½ tsp salt.
  • saute for a minute until the spices turn aromatic.
  • cool the vegetables and transfer them to a large bowl.
  • add 3 potato, 2 tbsp paneer, 2 tbsp coriander and mix well.
  • now add ¼ cup bread crumbs and mix forming a soft dough. bread crumbs help to absorb the excess moisture present in vegetables.
  • grease hands with oil and pinch a ball sized mixture.
  • press and shape to an ice cream stick like of kebab. you can shape to your choice.
  • to prepare the slurry, in a large bowl take 1 cup maida, ½ cup corn flour, ¼ tsp pepper powder and ¼ tsp salt.
  • mix well making sure there are no lumps.
  • now dip the stick into the slurry and coat over bread crumbs.
  • deep fry in hot oil keeping the flame on medium.
  • flip over and fry uniformly, until the sticks turn golden brown and crispy.
  • drain off over kitchen towel to remove excess oil.
  • finally, enjoy crispy veg starter with tomato sauce.
