i was planning to post this recipe for a long time now, but there was always some other priorities and other video posts. moreover, i was always with this confusion that mexican based recipes are not well appreciated by indian cuisine fans. hence i have not posted any authentic mexican cuisine recipes yet in my blog. having said that, i could see a trend lately of no-knead roti’s made with wheat batter. this is even further extended with tacos and hence i thought of sharing this recipe with leftover roti’s. i always get a lot of requests for leftover recipes, and this taco recipe is an ideal breakfast or even snack recipe for the next day.

furthermore, i would also like to add some additional tips, suggestions and variants to the chapati tacos recipe. firstly, i have used wheat flour-based phulka or roti which are small in size and ideal for tacos. but if you have chapati which is generally bigger in size, can also be used. secondly, there is no hard and fast rule to use just roti’s or chapati and you can use stuffed paratha too. in addition, you can also use store-bought hard and soft taco shells. lastly, avoid resting this snack once it is cooked as it may lose its shape and may turn soggy. on other hand, if you wish to have a soft taco, you may just stuff it and avoid roasting it completely.

Ingredients
  

for veggies:

  • 2 tsp olive oil
  • 2 clove garlic, finely chopped
  • 1 tsp mixed herbs
  • 1 tsp chilli flakes
  • ½ onion, chopped
  • rajma / kidney beans, boiled
  • ½ green capsicum, chopped
  • ½ yellow capsicum, chopped
  • ½ carrot, chopped
  • 3 tbsp sweet corn
  • ½ tsp salt

for salsa:

  • 1 onion, chopped
  • 1 tomato, chopped
  • 4 jalapeno, chopped
  • 1 tsp chilli sauce
  • 1 tsp lemon juice
  • ¼ tsp salt

for guacamole:

  • 1 avocado
  • 2 tbsp onion, finely chopped
  • ¼ tsp mixed herbs
  • ¼ tsp salt
  • 1 tsp lemon juice

for tacos:

  • 5 roti, leftover
  • tomato sauce
  • cheese, grated
  • lettuce, chopped
  • oil, for toasting

Instructions
 

how to prepare veggies stuffing:

  • firstly, in a pan heat 2 tsp olive oil.
  • add 2 clove garlic, 1 tsp mixed herbs and 1 tsp chilli flakes. saute until the spices turn aromatic.
  • add ½ onion and saute until it shrinks slightly.
  • further, add 1½ rajma and saute for 2 minutes. make sure you have soaked rajma overnight and boiled well. you can alternatively use canned rajma here.
  • now add ½ green capsicum, ½ yellow capsicum, ½ carrot, chopped, 3 tbsp sweet corn and ½ tsp salt.
  • saute for a minute making sure the vegetables are crunchy.
  • veggies are ready. keep aside.

how to make salsa or desi style onion tomato salad:

  • firstly, in a bowl take 1 onion, 1 tomato and 4 jalapeno.
  • also add 1 tsp chilli sauce, 1 tsp lemon juice and ¼ tsp salt.
  • mix well and salsa is ready. keep aside.

how to make guacamole or avocado dip:

  • firstly, mash 1 avocado using a fork.
  • add 2 tbsp onion, ¼ tsp mixed herbs, ¼ tsp salt and 1 tsp lemon juice.
  • mix well making sure everything is well combined. you can also add ¼ tsp pepper.
  • finally, guacamole is ready. keep aside.

how to prepre desi style tacos:

  • firstly, take leftover roti and spread 1 tsp tomato sauce.
  • now on one side place 2 tbsp cheese.
  • top with 2 tbsp prepared veggies and 1 tbsp salsa.
  • further top with chopped lettuce and 2 tbsp cheese.
  • fold half and is ready to toast on the pan.
  • brush with oil and toast on low to medium flame until the tacos turn crispy.
  • finally, enjoy roti tacos with guacamole and tomato sauce.
