dudhi na muthiya recipe | doodhi muthiya | how to make lauki muthiya with detailed photo and video recipe. a traditional and healthy snack recipe made with grated bottle gourd and spices. unlike any other gujarati snacks, it is considered to be filling and also healthy as it steam cooked and not deep fried. it is typically served as a street food snack in gujarat, but can be served as side dish or for morning breakfast too.
well the recipe looks very simple and easy to make, but can be overwhelming for many novice cook. perhaps the combination of ingredients used in this recipe can be immense. basically, the ingredients list includes like grated bottle gourd, atta, semolina and also besan. when all these ingredients combined in a correct proportion, it results in a great gujarati snack as muthiya. and perhaps for the same reason it is one of the filling and appetite snack. moreover the other best part of this snack is, it has a great shelf life. i personally make this when i have some unattended bottle gourd. i make it and store it in fridge and use it as side dish to my lunch or dinner.
furthermore, some easy and important tips, suggestions and variations to the dudhi na muthiya recipe. firstly, grate the bottle gourd just before adding, as it turns dark when exposed to air. secondly, once all the ingredients are combined together, it has to be kneaded to a soft dough and should not be hard. also while kneading, do not add water as the water in lauki is good enough to form the dough. lastly, tempering is the critical step while preparing the muthiya recipe. i have added sesame seeds and grated coconut on top of it. but you can skip either one of them as per your preference.

Ingredients
for muthiya:
- 1½ cup wheat flour / atta
- ¼ cup rava / semolina / suji, fine
- ¼ cup besan / gram flour
- ¼ tsp turmeric
- ¾ tsp kashmiri red chilli powder
- ½ tsp coriander powder
- ¼ tsp cumin powder / jeera powder
- ½ tsp garam masala
- ¼ tsp ajwain / carom seeds
- ½ tsp fennel / saunf
- 1 tbsp sugarpinch hing / asafoetida
- ½ tsp salt
- 2 cup lauki / bottle gourd, grated
- ½ tsp ginger paste
- 1 chilli, finely chopped
- 2 tbsp coriander, finely chopped
- 1 tbsp curd / yogurt
- 1 tbsp oil
for tempering:
- 2 tbsp oil
- 1 tsp mustard
- 2 tsp sesame seeds
- pinch hing / asafoetida
- few curry leaves
- 2 tbsp coconut, grated
- 2 tbsp coriander, chopped
Instructions
- firstly, in a large mixing bowl take all the ingredients listed and knead the dough well.
- now take a large ball sized dough and roll to a cylindrical shape.
- cover and steam for 20 minutes.
- further, in a kadai heat 2 tbsp oil and splutter tempering.
- add in sliced muthiya and mix well.
- spread and roast on both sides until the sides turn crisp.
- further add 2 tbsp coconut, 2 tbsp coriander and mix gently.
- finally, enjoy dudhi na muthiya with green chutney.
how to make doodhi muthiya with step by step photo:
- firstly, in a large mixing bowl take 1½ cup wheat flour, ¼ cup rava and ¼ cup besan.
- add ¼ tsp turmeric, ¾ tsp chilli powder, ½ tsp coriander powder, ¼ tsp cumin powder, ½ tsp garam masala, ¼ tsp ajwain, ½ tsp fennel, 1 tbsp sugar, pinch hing and ½ tsp salt.
- combine well making sure the spices are mixed well.
- further add 2 cup lauki, ½ tsp ginger paste, 1 chilli, 2 tbsp coriander, 1 tbsp curd and 1 tbsp oil.
- mix well by squeezing the lauki.
- knead the dough well, the water in lauki should be good enough to form a dough.
- rest the dough for 15 minutes, making sure the dough turns soft.
- now take a large ball sized dough and roll to a cylindrical shape.
- place the rolled dough into the steamer. make sure to grease the steamer with oil to prevent from sticking.
- cover and steam for 20 minutes, keeping the flame on medium.
- steam until the toothpick inserted comes out clean.
- cool slightly and cut into thick slices. keep aside.
tempering muthiya:
- further, in a kadai heat 2 tbsp oil and splutter 1 tsp mustard, 2 tsp sesame seeds, pinch hing and few curry leaves.
- add in sliced muthiya and mix well.
- spread and roast on both sides until the sides turn crisp.
- further add 2 tbsp coconut, 2 tbsp coriander and mix gently.
- finally, enjoy dudhi na muthiya with green chutney.
notes
- firstly, lauki can be replaced with methi leaves to prepare methi na muthiya.
- also, make a soft dough to prepare soft muthiya. else they will be dry and hard once cooled.
- additionally, adding coconut is optional. however, it enhances the flavour.
- finally, dudhi na muthiya recipe is very healthy and tasty when prepared with mixed vegetables.
