rava dhokla recipe | instant sooji dhokla recipe | suji ka dhokla with detailed photo and video recipe. dhokla is a vegetarian snack delicacy from the gujarati cuisine. dhokla recipes are typically served for breakfast, main course and even for evening snacks. typically dhokla recipe is prepared from beasn or chickpea flour, but this recipe is an alternative and prepared from rava or semolina.
i have already shared the traditional khaman dhokla recipe but i always wanted to share the alternative version of rava dhokla recipe. i personally feel suji ka dhokla is much more healthier and tastier compared to the khaman dhokla. whenever i eat besan dhokla, i feel bit uncomfortable to digest even though it tastes great. perhaps it could be because of the chickpea flour which can upset your stomach. hence i always prefer to prepare this recipe as i find it very similar to south indian rava idli recipe.
furthermore, some important tips and suggestions for a perfect rava dhokla recipe. firstly, avoid using turmeric powder + baking agent to any dhokla recipe. the combination may turn the dhokla to red in colour. secondly, i have used eno fruit salt as a baking agent for this recipe. alternatively baking soda can be used as a baking agent but avoid serving it kids. lastly, i have not garnished sooji ka dhokla with coconut and if you prefer you are more than welcome to add it.

Ingredients
for dhokla batter:
- 1 cup rava / semolina, coarse
- 1 cup rava / semolina, fine
- 1 cup curd
- 2 chilli, finely chopped
- 1 tsp ginger paste
- 1 tsp sugar
- ¾ tsp salt
- pinch hing
- ½ cup water
- 1 tsp eno fruit salt
for tempering:
- 2 tbsp oil
- 1 tsp mustard
- ½ tsp cumin
- 2 tbsp sesame
- 2 chilli
- few curry leaves
- pinch hing
- ¼ cup water
- 1 tsp sugar
- ¼ tsp salt
- 1 tsp lemon juice
- 2 tbsp coconut, grated
- 2 tbsp coriander, finely chopped
Instructions
- firstly, in a large bowl take 1 cup coarse rava, 1 cup fine rava.
- add 1 cup curd, 2 chilli, 1 tsp ginger paste, 1 tsp sugar, ¾ tsp salt and pinch hing.
- mix well making sure everything is well combined.
- now add ½ cup water and mix well.
- cover and rest for 20 minutes or until the rava is soaked well.
- further, add 1 tsp eno fruit salt and mix gently.
- the batter turns frothy.
- pour the batter immediately into a vessel. make sure to grease and line with butter paper to prevent from sticking.
- place in the steamer and steam for 20 minutes or until the toothpick inserted comes clean.
- to prepare the tempering, heat 2 tbsp oil. splutter 1 tsp mustard, ½ tsp cumin, 2 tbsp sesame, 2 chilli, few curry leaves and pinch hing.
- add ¼ cup water, 1 tsp sugar, ¼ tsp salt and 1 tsp lemon juice.
- mix well and get to a boil.
- pour the tempering over the dhokla.
- also, top with 2 tbsp coconut and 2 tbsp coriander.
- finally, enjoy instant rava dhokla with green chutney.

notes:
- firstly, adding fine and coarse rava gives a nice texture to the dhokla.
- also, if you do not have access to eno, then you can use baking soda.
- additionally, you can add turmeric to get yellow coloured dhokla.
- finally, the instant rava dhokla recipe tastes great when served with spicy chutney.

can we replace eno fruit salt with any other things ?
you can use baking powder but it will turn dhokla into yellowish as it reacts while baking. i avoid it adding hence.
