jackfruit biriyani recipe | kathal biriyani | raw & tender kathal ki biryani with detailed photo and video recipe. a unique and flavoured rice biriyani recipe made with young jackfruit and biriyani masala. it is often considered as a meat substitute biriyani particularly to the famous mutton biriyani for its striking similarities. it is generally prepared during the early monsoon season of india as young and tender jackfruit is easily available.
well, to begin with, i am a huge fan of biriyani and perhaps we have the vegetarian biriyani almost every week. previously, we use to explore various nearby restaurants for an authentic dum biriyani. but we have stopped now as we were not getting that authentic and real biriyani. in short, we have come to a conclusion that the homemade biryani’s are much better in taste and health and hence better of making at home. this has lead to exploring more types of veg biriyani options and the recent addition is the kathal biriyani. to be honest, i am not sure how a meat biriyani tastes like, but for me, this has to something similar to a meat variant. particularly, the tender jackfruit slices do have striking similarities to the meat variant. hence i would recommend trying this, especially if you are a meat eater and like to explore some meat alternatives.
furthermore, some more additional tips, suggestions and variants to the jackfruit biriyani recipe. firstly, in this recipe, i have shown a combination of jackfruit and mixed vegetables. i personally like it that way, yet you may prepare with just tender jackfruit slices. in that case, you may have to double the quantity. secondly, do not ever try this recipe with sweet or ripe jackfruit slices. it would spoil the taste and moreover, it would reduce the spice heat of the biriyani flavour. lastly, the combination of jackfruit and mixed vegetables has to be marinated thoroughly. in addition, while you marinate, you may feel the taste very spicy, but it would reduce gradually once it is properly rested.

Ingredients
for marination:
- 1 cup curd
- 1 tsp ginger garlic paste
- ¼ tsp turmeric
- 1 tsp chilli powder
- 3 tbsp biryani masala
- ½ tsp salt
- 2 tsp lemon juice
- 2 tsp oil
- 3 tbsp coriander, chopped
- 3 tbsp mint, chopped
- 12 pieces jackfruit, raw
- 1 carrot, chopped
- 1 potato, chopped
- 5 beans, chopped
- 2 tbsp fried onions / barista
for biryani rice:
- 2 cup basmati rice
- 1 tsp cumin
- 2 star anise
- 2 bay leaf
- 1 tsp pepper
- ½ tsp cloves
- 4 cardamom
- 2 tsp lemon juice
- 2 chilli
- 1 tbsp salt
for biryani gravy:
- 2 tbsp ghee / clarified butter
- 2 tbsp oil
- 1 bay leaf
- 1 inch cinnamon
- 1 black cardamom
- ½ tsp cloves
- 4 cardamom
- 1 star anise
- 1 tsp cumin
- 2 onion, finely chopped
- 1 tsp ginger garlic paste
- 8 cubes capsicum
other ingredients:
- 2 tbsp saffron milk
- 2 tbsp coriander, chopped
- 2 tbsp mint, chopped
- 1 tsp biryani masala
- 2 tbsp ghee / clarified butter
Instructions
how to marinate veggies for biriyani:
- firstly, in a large bowl take 1 cup curd. make sure to take thick and slightly sour curd.
- add 1 tsp ginger garlic paste, ¼ tsp turmeric, 1 tsp chilli powder, 3 tbsp biryani masala and ½ tsp salt. note the biryani masala has salt in it, so i have just added ½ tsp of extra salt.
- also, add 2 tsp lemon juice, 2 tsp oil, 3 tbsp coriander and 3 tbsp mint.
- mix well making sure all the spices are well combined.
- now add 12 pieces of jackfruit, 1 carrot, 1 potato, 5 beans and 2 tbsp fried onions.
- mix well making sure all the vegetables are coated well with the mixture.
- cover and rest for 30 minutes, making sure it is well marinated.
how to cook rice for biryani:
- firstly, rinse and soak long grain basmati rice for 20 minutes.
- in a large vessel take enough water and add spices.
- also, add 2 tsp lemon juice, 2 chilli and 1 tbsp salt.
- mix well and get to a rolling boil.
- now add soaked rice and give a mix.
- boil for 2 minutes, or until the rice is almost cooked.
- biryani rice is ready to be used to prepare birynani.
how to make kathal biryani:
- in a large kadai heat 2 tbsp ghee and 2 tbsp oil.
- add 1 bay leaf, 1 inch cinnamon, 1 black cardamom, ½ tsp cloves, 4 cardamom, 1 star anise and 1 tsp cumin.
- saute until the spices turn aromatic.
- add 2 onions, 1 tsp ginger garlic paste and saute until the onions turn golden brown.
- further, add 8 cubes of capsicum and saute for 2 minutes.
- now add marinated vegetables and cook for 2 minutes.
- cover and cook for 10 minutes or until the vegetables are cooked almost.
- spread the vegetables uniformly forming a nice layer.
- add in almost cooked basmati rice and spread uniformly.
- also top with 2 tbsp saffron milk, 2 tbsp coriander, 2 tbsp mint, 1 tsp biryani masala and 2 tbsp ghee.
- cover and simmer for 30 minutes. seal the hole to prevent steam from escaping.
- finally, enjoy kathal biryani recipe with raita and salan.

notes:
- firstly, make sure to soak the rice to get the extra-long grains while cooking.
- also, adding raw jackfruit to marination will enhance the flavour.
- additionally, cooking in the dum style the biryani will take great.
- finally, kathal biryani recipe or jack fruit biryani recipe tastes great when served after 1 hour.
