kaju namak para recipe | kaju namak paare | cashew namak pare recipe with detailed photo and video recipe. an easy and spicy deep-fried crisp snack recipe shaped like cashews made with plain flour and spice powders. basically, an extension to the popular namak pare recipe with an extension to its shape of cashews. it can be an ideal evening munching snacks enjoyed with a cup of favourite hot beverages or can also be served as a side to your lunch or dinner recipes.
as i was explaining earlier there isn’t any significant difference between the authentic and traditional namak para recipe. at a high level, the shape is the only significant difference. yet just because of the shape, it is made for different occasions. basically, the cashew shaped namak paare is prepared for occasions, particularly with the intention to share with friends and family. in other words, these kaju shaped fritters are filled in sweet boxes as a replacement for spiced and savoury cashews. whereas the basic ones are made for the family as a munching snack without any intention to fill it in a gift pack. there isn’t any hard and fast rule, but this a general practice with many families and across many halwai shops.
furthermore some more additional tips, suggestions and variations to the kaju namak para recipe. firstly, the ideal namak paare is made with just plain flour or maida. but this can also be made with other flours like atta or wheat flour or the combination of wheat and plain flour. it should equally taste great but maida is more preferred. secondly, avoid using large caps to shape these and use small-sized caps. also, these caps have to have sharp edges and hence i would recommend using metal bottle caps. lastly, deep fry in a low flame to make it crisp and brittle. it also helps to get a good colour and it would be evenly cooked. moreover deep fry these in small batches and make sure the batch is transferred to oil as soon as possible.

Ingredients
- 2 cup maida
- 2 tbsp rava / suji, coarse
- ½ tsp ajwain / carom seeds
- 1 tsp cumin
- ½ tsp salt
- 2 tbsp oil, hot
- water, for kneading
- oil, for frying
for spices:
- ½ tsp chilli powder
- ¼ tsp pepper powder
- ½ tsp chaat masala
- ¼ tsp salt
- few curry leaves, fried
Instructions
- firstly, in a large bowl take 2 cup maida and 2 tbsp rava.
- add ½ tsp ajwain, 1 tsp cumin and ½ tsp salt. mix well.
- now pour 2 tbsp hot oil and mix well.
- crumble and mix until the flour turns moist.
- further, add water and start to knead.
- knead to a smooth and soft dough adding water if required.
- now roll the dough by greasing oil to the rolling pin.
- roll to slightly thick thickness.
- using a bottle cap make a moon-like shape.
- now deep fry in hot oil, keeping the flame on low.
- stir occasionally, and fry until the namak pare turns golden and crunchy.
- drain off to remove excess oil.
- now add ½ tsp chilli powder, ¼ tsp pepper powder, ½ tsp chaat masala, ¼ tsp salt and few curry leaves.
- mix well making sure the spices are well coated.
- finally, enjoy kaju namak para with a cup of chai.

notes:
- firstly, make sure to fry on low flame, else the namkeen will not turn crunchy from inside.
- also, add the spices to your choice to make chatpata.
