karasev recipe | kara sev recipe | besan sev recipe with detailed photo and video recipe. a popular deep fried snack prepared especially during festival seasons or diwali snacks. it is typically thick in texture and is mainly prepared with besan and rice flour dough with some jeera and black pepper. it is an ideal snack to share with friends and family especially when combined with diwali sweets.
there are various forms of karasev recipe is prepared in south indian cuisine. each state of south india has its own variations with subtle changes to the ingredients. however the main variation is done with the proportions of besan or chickpea flour with rice flour. each flour dominance would result in a different colour and texture. by adding more quantity of rice flour you may have a crisp and whitish coloured kara sev recipe. whereas with more quantity of besan you may have strong yellowish colour with softer besan sev recipe. in addition some recipes may even add crushed garlic can also be added for more flavour.
it is very easy and simple to prepare the karasev recipe yet i would like to share few tips and recommendations for it. firstly, do not add more water while kneading dough, if the dough is watery then the sev will absorb oil. also adjust the amount of pepper based on the spice level you are looking for. lastly, make shape of your choice, i like to keep it random as it is more easy to prepare.

Ingredients
- 1 cup besan / gram flour
- ½ cup rice flour
- ½ tsp cumin / jeera
- ¼ tsp turmeric / haldi
- 1 tsp black pepper, crushed
- pinch of hing / asafoetida
- 1 tbsp butter, room temperature
- ½ tsp salt
- water as required, for dough
- oil for deep frying
Instructions
- firstly, in a large mixing bowl take 1 cup besan and ½ cup rice flour.
- add in ½ tsp cumin, ¼ tsp turmeric, 1 tsp crushed pepper, pinch of hing and 1 tbsp butter and ½ tsp salt. combine well.
- now add ¼ cup water (or as required) and prepare smooth dough. the dough will be slightly sticky, thats normal.
- grease the large holed mould with some oil and stuff dough into it.
- further, press and spread the sev in hot oil forming a circle in the oil and make sure you do not overlap.
- after a minute, flip over and fry the other side.
- finally, drain over kitchen paper to absorb oil and repeat making more khara sev with the remaining dough.

notes:
- firstly, instead of pepper you can use red chilli powder or combination of both.
- also, make sure to fry in hot oil on medium flame. else khara sev will be raw from inside.
- additionally, rice flour helps to make sev more crispy and tasty.
- finally, khara sev stays good for a month when stored in airtight container.
