Chakli or murukku recipes are one of the common and popular snack recipes made during the Indian festival seasons. It is typically made with rice and urad dal which is a lengthy and tedious process. To mitigate this, there are several hack recipes and instant rice chakli is one such variation.

I am a big fan of instant recipes. I generally avoid lengthy and tedious traditional recipes if the outcome of an instant recipe is on par with traditional ones. In this post, I have shown an instant murukku made with a combination of rice flour and plain flour. I have also added butter to dry ingredients to make it extra soft and tasty. When I compare it with traditional, I have to soak, ground rice and urad dal combination which can easily take a couple of hours. Whereas in this recipe I have hardly taken 30 minutes to prepare end to end recipe, including kneading the dough and deep-frying. You can easily compare it with butter murukku with its softness and the traditional chakli for its crispiness.

Furthermore, I would also like to highlight some more tips, suggestions and variations to the instant chakli recipes. Firstly, I would heavily recommend using fine powder rice flour and avoiding coarse rice flour. You may not be able to shape the dough with coarse powder and also the chakkuli may turn brittle. Secondly, I have used a star-shaped murukku maker, to shape these chaklis. You may very well use other shapers as per your choice. Lastly, store these in an airtight container for longer shelf life. It should easily last long for 1-2 weeks without losing its crispiness.

Ingredients
  

  • 2 cup rice flour, fine
  • 1 cup maida / plain flour
  • 1 tsp salt
  • 2 tbsp butter, room temperature
  • ½ tsp turmeric
  • 1 tsp red chilli powder
  • 2 tbsp sesame / til
  • pinch hing / asafoetida
  • 1 tsp salt
  • water, for kneading
  • oil, for frying

Instructions
 

  • firstly, in a large mixing bowl take 2 cup rice flour, 1 cup maida and 1 tsp salt.
  • also add ½ tsp turmeric, 1 tsp red chilli powder, 2 tbsp sesame, pinch hing and 1 tsp salt.
  • mix well making sure everything is well combined.
  • now add 2 tbsp butter, crumble and mix until the flour is well combined with butter.
  • add water slowly and start to knead the dough.
  • knead to smooth and soft dough adding water as required.
  • now take star mould and fix to the chakli maker.
  • grease the chakli maker with some oil. this prevents the dough from sticking to mould.
  • furthermore, make a cylindrical shape out of dough and place the dough inside the maker.
  • tighten the lid and start preparing chaklis. on the wet cloth or butter paper make small spiral shape chaklis by pressing
  • seal the ends so that it doesn’t fall apart while deep frying.
  • take one murukku at a time and slide it into the hot oil.
  • flip the murukku and fry on medium flame till they turn crispy from both sides.
  • furthermore, drain over a paper towel to remove excess oil.
  • finally, once cooled enjoy instant chakli or store in an airtight container for 2 weeks.

Notes:

  • Firstly, make sure to fry on low to medium flame, or else the chakli will not turn crunchy.
  • Also, do not overcrowd the murukku while frying, as it will break while flipping.
  • Additionally, you can replace sesame with jeera for variation in flavour.
  • Finally, the instant chakli recipe stays good for 2 weeks when stored in an airtight container.
