as i was explaining earlier, young jackfruit slices can be used in myriad ways to prepare curries or sabji’s. particularly the type of curry changes to the location where it is made. this particular recipe is very much inspired by the north indian dhaba style cooking. having said that, in south india, especially in my hometown it is made as dry as a kheema. it is basically finely chopped and stir-fried with basic spices and herbs. more importantly, it is made without onion and garlic and served during festival and occasion lunch and dinner. whereas, this is a typical restaurant style curry with onion and garlic infused flavour. hence i would recommend you to try this recipe once and serve it to your friends and family.
furthermore, some more additional tips, suggestions and variants to the kathal ki sabji recipe. firstly, i would heavily recommend using a tender raw or young jackfruit for this recipe. ensure you get raw, as you may be tricked with ripe one which would end up releasing more sweetness to the curry. secondly, i have tried to marinate the tender jackfruit with spices and yoghurt mimicking the meat marination process. this would add more taste and flavour to the curry, but not mandatory and you can skip it. lastly, if you are not able to get the tender fresh raw jackfruit, you may try the canned jackfruit too. look for young jackfruit in your supermarket and it should taste the same.

Ingredients
for marination:
- 15 pieces raw jackfruit
- ½ cup curd
- ½ tsp chilli powder
- ¼ tsp turmeric
- 1 tsp kasuri methi
- 1 tsp ginger garlic paste
- ¼ tsp salt
- ½ tsp garam masala
- 2 tbsp oil, for frying
for curry:
- 2 tbsp oil
- 2 bay leaf
- 1 inch cinnamon
- 4 pods cardamom
- 7 cloves
- 1 tsp cumin
- 1 onion, finely chopped
- 1 tsp ginger garlic paste
- ½ tsp turmeric
- 1 tsp chilli powder
- 1 tsp coriander powder
- ½ tsp cumin powder
- ½ tsp salt
- 3 to mato, finely chopped
- 1 cup water
- ¼ tsp garam masala
- 2 tbsp coriander, finely chopped
Instructions
- firstly, in a large bowl take 15 pieces of raw jackfruit. make sure to soak the jackfruit in saltwater soon after chopping to prevent discolouring. you can also use frozen or tin jackfruits.
- add ½ cup curd, ½ tsp chilli powder, ¼ tsp turmeric, 1 tsp kasuri methi, 1 tsp ginger garlic paste, ¼ tsp salt and ½ tsp garam masala.
- mix well and marinate for 30 minutes.
- now in a pan heat 2 tbsp oil and add marinated jackfruit.
- fry on medium flame until the kathal is cooked well. keep aside.
- in a large kadai heat 2 tbsp oil. add 2 bay leaf, 1 inch cinnamon, 4 pods cardamom, 7 cloves and 1 tsp cumin. saute until the spices turn aromatic.
- further, add 1 onion and 1 tsp ginger garlic paste.
- saute until the onions turn golden brown.
- keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp cumin powder and ½ tsp salt.
- saute until the spices turn aromatic.
- furthermore, add 3 tomatoes and cook well.
- cook until the tomatoes turn soft and mushy.
- add in fried raw jackfruit (kathal) and mix well.
- add 1 cup water and mix adjusting consistency as required.
- cover and simmer for 15 minutes or until the jackfruits are cooked well and flavours are absorbed.
- now add ¼ tsp garam masala and 2 tbsp coriander. mix well.
- finally, enjoy kathal ki sabji with roti or naan.
