The most common reason is to exchange with friends/family or served as a snack with tea and coffee. One such simple snack is Maddur Vada from Karnataka cuisine.
I shared quite a few Karnataka cuisine recipes including regional Udupi, Mangalore, and Mysore recipes. However, I somehow missed this simple and crisp Maddur Vada recipe to include in my blog. I realized this only after I got a recipe request from one of my readers to share the authentic Maddur Vade recipe with a video. The irony is I prepare this crisp vade frequently for my evening tea or as a munching side dish for my husband’s lunch box. Yet it slipped out of my radar and finally, I am sharing this authentic recipe from my state. I have kept it simple and basic, with rice flour, plain flour, and semolina. Adding rava with rice flour makes it crisp and crunchy, whereas maida gives the taste to the snack.
Some important tips and recommendations for a crisp and thin Maddur Vada Snack recipe. Firstly, before adding water to the dry ingredients, squeeze the onions with dry ingredients. The onion releases its juice when squeezed and it helps to release the flavor and moisture. Secondly, I have thinly patted the Vade to a thin round, patty-like snack. But to make life easy you can use a round cutter to shape it round. Lastly, deep fry this Maddur Vade in hot oil on medium flame. Both the inner and outer layer has to be cooked evenly. Moreover, it has to be deep fried in low flame to make it crisp and cook it evenly.

About Maddur Vada
It is a simple, crisp, and crunchy deep-fried snack recipe made with a combination of rice flour, maida, and rava/sooji. The Maddur Vada most commonly known as Maddur Vade hails from the small town of Maddur from Karnataka. It is most commonly known to serve as an evening snack with a cup of tea or coffee, but not limited to it. It can also be an ideal side dish for any type of meal, including rasam rice or dal rice combo meal.
There are many different types of Maddur Vada, but the most common is made with rice flour, maida, and rava. The taste of this snack is derived from the onions combined with the above dry ingredients. The juice from onions is infused into the dough and tastes great when deep fried in low flame. The same vada can also be made with wheat flour as an alternative to maida. This makes it healthy but may not be a tasty snack. In addition, adding rava helps to make it crisp and crunchy, but optional.

Maddur Vada Recipe | Crispy Maddur Vade - Tea Time Snack
Ingredients
- 1 onion, sliced
- 2 chilli, finely chopped
- 1 inch ginger, chopped
- 2 tbsp coriander, finely chopped
- 1 cup rice flour
- 1 cup maida
- ½ cup rava, coarse
- 2 tbsp sesame
- 2 tbsp roasted peanuts, crushed
- pinch hing
- 1 tsp salt
- water, for kneading
- oil, for frying
Instructions
- Firstly, in a bowl take 1 onion, 2 chilli, 1 inch ginger and 2 tbsp coriander.
- Add 1 cup rice flour, 1 cup maida and ½ cup rava.
- Also add 2 tbsp sesame, 2 tbsp roasted peanuts, pinch hing and 1 tsp salt.
- Crumble and mix well making sure everything is well combined.
- Further, add 2 tbsp hot oil and mix. This helps the vada to turn crunchy.
- Add water slowly and knead the dough.
- Do not add more water as the dough needs to be tight.
- Pinch a ball-sized dough, press and flatten it slightly thick.
- Deep fry in hot oil, keeping the flame on medium.
- Do not touch for 2 minutes as there are chances for the vada to break.
- Stir occasionally and fry both sides until the vada turns golden brown.
- Drain off to remove excess oil.
- Finally, enjoy Maddur Vada Recipe with coconut chutney.

- Firstly, the key tip to make crunchy maddur vada is to use as little water as possible.
- Also, the onions release water, so make sure to add water as required.
- Additionally, you can add almonds and cashews along with peanuts to get crunchy bites.
- Finally, Maddur Vada Recipe stays crunchy for 3 to 4 days when stored in air tight container.
