masala paratha recipe | spicy paratha | how to make masala parantha with detailed photo and video recipe. an interesting spicy paratha recipe made with chickpea flour and spices. it is a simple and easy flatbread recipe as the stuffing is mixed directly to the dough as compared to traditional stuffing. it is savoury, spicy and contains all the required spices and hence does not require any additional side dishes to it.
well, i have posted quite a few traditional parantha recipes with vegetable-based stuffing. but these days i have moved to the easier way of making paratha recipes. i personally feel, mixing the vegetable stuffing directly to bread dough is much easier compared to stuff inside the dough and also roll it after that. particularly it can be a nightmare for the novice cook. having said that the same logic cannot be applied for all the vegetables. for example, potatoes or cauliflower is better of stuffed inside rather mixing it. in other words, the logic of mixing the stuffing directly to dough has to be made wisely. particularly the hard shaped veggies are better off if made the traditional way.
anyway, i would like to conclude with few tips, suggestions and variations for a perfect masala paratha recipe. firstly, in this recipe, i have added spices to the wheat dough, but it can also be made with other flours too. particularly it can be made with besan flour, plain flour and even with corn flour too. secondly, on top of spices, you can also add vegetable based puree with spices. you can add leafy vegetable puree like spinach, methi and also dill leaves too. lastly, these parathas generally do not require any additional side dishes. hence you can plan this flatbread while travelling and top it up with pickle or chatni pudi and ghee.

Ingredients
- 2½ cup wheat flour / atta
- ¾ tsp kashmiri red chilli powder
- ½ tsp garam masala
- ¼ tsp turmeric
- ¼ tsp cumin powder
- ½ tsp aamchur / dry mango powder
- 1 tbsp kasuri methi, crushed
- ¼ tsp ajwain / carom seeds
- ½ tsp ginger paste
- 1 tsp ghee / clarified butter
- 1 tsp salt
- 1 cup hot water
other ingredients:
- 3 tbsp ghee / clarified butter
- 1 tsp garam masala
- ¼ cup wheat flour / atta, for dusting
- oil for roasting
Instructions
- firstly, in a large bowl take 2½ cup wheat flour and add ¾ tsp chilli powder, ½ tsp garam masala, ¼ tsp turmeric, ¼ tsp cumin powder.
- also add ½ tsp aamchur, 1 tbsp kasuri methi, ¼ tsp ajwain, ½ tsp ginger paste, 1 tsp ghee and 1 tsp salt.
- crumble and mix well making sure the spices are well combined.
- add 1 cup hot water and mix with the spoon.
- knead the dough well-adding water as required.
- grease the dough with oil and rest for 15 minutes.
- knead the dough again slightly and pinch a ball sized dough.
- dust with wheat flour and roll to small disc.
- spread 1 tsp ghee and pinch of garam masala.
- with the back of a spoon, spread uniformly.
- form a bundle forming a ball sized dough.
- also, dust with some wheat flour.
- further, roll it in a slightly thick circle like chapati or paratha.
- now on a hot tawa place the rolled paratha and cook for a minute.
- furthermore, when the base is partly cooked, flip the masala paratha.
- also, spread ½ tsp oil / ghee and press slightly both the sides.
- flip again once or twice till both the sides are cooked properly.
- finally, serve masala paratha with raita and pickle.
how to make ajwain paratha with step by step photo:
