paratha recipes are very common in many indian households and so it is in my house too. we generally prefer to have roti or chapati with gravy based curries for our nightly dinners. i particularly like to mix and match and most of the time i end up with aloo ka paratha. as a matter of fact, i do not prepare the aloo stuffing separately and i try to reuse any leftover dry sabzis like aloo or gobi ki sabzi. the precooked sabzi can be laborious sometime to prepare as it may have extra moisture and spices. but in this recipe, i have showcased the traditional aloo paratha recipe with boiled and mashed potatoes. in addition, i have showcased 2 ways of kneading the dough, i.e with hand and with a bread maker. hence it should be a fairly easy recipe for most of them.

furthermore, some considerations and recommendations while preparing the aloo paratha recipe. firstly, for the stuffing, i have grated the boiled potatoes so that it is evenly mashed and eventually helps while filling. secondly, once the kneading of dough is done, allow it to rest for some time. also, ensure to add cooking oil while making the dough so that it can be easily shaped and stuffed. lastly, while cooking the aloo ka paratha add oil or ghee after both sides of paratha is partially cooked once. this ensures paratha does not absorb more oil while cooking. also, enjoy these paratha’s with a topping of butter slice and choice of a pickle as a side dish.

Ingredients (1 cup = 255 ML)
for dough:
  • 2 cup wheat flour / atta
  • 2 tsp oil
  • ½ tsp salt
  • 1 cup water to knead
for aloo stuffing:
  • 2 potato / aloo boiled & mashed
  • 1 chilli finely chopped
  • ½ tsp coriander seeds crushed
  • ¼ tsp kashmiri red chilli powder
  • ¼ tsp turmeric
  • ¼ tsp cumin powder / jeera powder
  • ½ tsp aamchur / dry mango powder
  • ¼ tsp ajwain / carom seeds
  • ½ tsp ginger paste
  • 2 tbsp coriander finely chopped
  • ¼ tsp salt
other ingredients:
  • ½ cup wheat flour/atta to dust
  • 7 tsp oil
Instructions
  1. firstly, knead wheat dough by taking 2 cup wheat flour, 2 tsp oil, ½ tsp salt and 1 cup water.

  2. further, in a large mixing bowl take 2 boiled and mashed potato.
  3. add 1 chilli, ½ tsp crushed coriander seeds, ¼ tsp chilli powder, ¼ tsp turmeric, ¼ tsp cumin powder, ½ tsp aamchur, ¼ tsp ajwain, ½ tsp ginger paste, 2 tbsp coriander and ¼ tsp salt.
  4. mix well making sure all the spices are combined well.
  5. pinch a ball sized wheat dough and dust with some wheat flour.
  6. further, roll it in a circle of about 5 to 5.5 inches in diameter.
  7. stuff the stuffing and roll slightly thick.

  8. cook the paratha to golden brown adding oil/ghee.

  9. finally, serve hot aloo paratha with butter, sauce, raita or pickle.

how to make aloo ka paratha with step by step photo:

  1. firstly, knead wheat dough by taking 2 cup wheat flour, 2 tsp oil, ½ tsp salt.

  2. add 1 cup water or required and knead to a smooth and soft dough. i have used atta maker to knead dough here.

  3. grease the dough with oil and keep aside.

  4. further, in a large mixing bowl take 2 boiled and mashed potato.

  5. add 1 chilli, ½ tsp crushed coriander seeds, ¼ tsp chilli powder, ¼ tsp turmeric, ¼ tsp cumin powder, ½ tsp aamchur, ¼ tsp ajwain, ½ tsp ginger paste, 2 tbsp coriander and ¼ tsp salt.

  6. mix well making sure all the spices are combined well.

  7. pinch a ball sized wheat dough and dust with some wheat flour.

  8. further, roll it in a circle of about 5 to 5.5 inches in diameter.

  9. place a ball sized aloo stuffing in the centre.

  10. take the edge and start pleating bringing to the centre.

  11. also join the pleats together and secure tight pinching off excess dough.

  12. sprinkle some wheat flour and roll slightly thick.

  13. on a hot tawa place the rolled paratha and cook for a minute.

  14. furthermore, flip the paratha when the base is partly cooked (after a minute).

  15. also brush oil/ghee and press slightly. flip again once or twice till both the sides are cooked properly.

notes:

  • firstly, make sure to knead a smooth and soft dough, else it will be difficult to roll.
  • also, add finely chopped onions to the stuffing to enhance the flavour.
  • additionally, grate boiled potato to avoid any chunks of potato coming out while rolling
  • finally, aloo paratha recipe tastes great when roasted with ghee.
