i prepare dosa very frequently, especially it is very convenient for morning breakfast with dosa batter ready. i prepare different kinds of dosas with a different capacity which mainly differs with thickness and sizes. with all these experience, i jumped into jini dosa preparation but initially, i had bitter experience with it. basically, the stuffing was creating the problem and i was not able to roll it as it was sticking to the bottom. as matter of fact, this is my 4th attempt and there were quite a few permutations and combination with the stuffing. in this recipe post, i have used optimal stuffing so that i can easily roll and also controlled the amount of cheese topped in it.

furthermore, some important tips and suggestions while preparing the cheesy jini dosa recipe. firstly, the dosa batter is very critical for this recipe and you cannot use all the dosa batter. i heavily recommend using masala dosa batter which yields crisp and can be rolled thin. secondly, do not overstuff the dosa and keep it simple with minimum stuffings. also, make sure the stuffing is watery and not dry. basically, this helps to keep the moisture within the dosa and do not get burned. lastly, if you are finding it difficult to roll the dosa with stuffing, then skip the cheese and add it after it is rolled. moreover adding cheese is not mandatory and can be totally skipped.

Ingredients (1 cup = 250 ML)
  • ½ cup dosa batter
  • 1 tsp  butter
  • 2 tbsp onion finely chopped
  • 2 tbsp cabbage finely chopped
  • 2 tbsp capsicum finely chopped
  • ½ tsp schezwan sauce
  • 2 tsp tomato sauce
  • ¼ tsp pav bhaji masala
  • pinch salt
  • 2 tbsp mozzarella cheese / cheddar cheese grated
  • 2 tbsp spring onion chopped
Instructions
  1. firstly, pour a ladle full of dosa batter on hot tawa and spread gently.
  2. simmer for a minute, allowing dosa to cook.
  3. now rub butter evenly keeping the flame on low.
  4. further add 2 tbsp onion, 2 tbsp cabbage and 2 tbsp capsicum.
  5. also add ½ tsp schezwan sauce, 2 tsp tomato sauce, ¼ tsp pav bhaji masala, 1 tsp butter and pinch salt.
  6. mix well and spread the stuffing covering the entire dosa.
  7. cut the dosa into thin strips using a pizza cutter or sharp knife.
  8. further grate 2 tbsp mozzarella cheese / cheddar cheese uniformly.
  9. simmer till the dosa turns crisp and cheese melts completely.
  10. scrape the dosa strips and roll tight.
  11. finally, serve jini dosa topped with more cheese and spring onion.
