mushroom rice recipe | mushroom pulav | mushroom pilaf recipe with detailed photo and video recipe. simple and easy mushroom flavoured rice recipe made with basmati rice and indian spices. it is a favourite and popular choice as lunch box recipe and can be made in a jiffy during those busy mornings. it can be served best with cucumber raita or pudina raita but can be served as it is without any side dish.
i have posted several rice recipes till now in my blog but this recipe is my new favourite recipe. it is one of the easy and simple recipes i prepare on a day a to day basis for my husband’s lunch box. it is one pot meal as it does not need any extra side dish specifically. but my husband like it with simple moong dal tadka or mix dal tadka recipes. you may require a side dish, only if the rice turns out dry. you do not need any particular side dish if it is moist and easy to swallow. moreover, i have cooked the mushroom’s separately which makes it tender and makes this recipe a complete one-pot meal.
furthermore, some easy tips, suggestions and variations for this mushroom rice recipe or mushroom pulav. firstly, i heavily recommend to use basmati rice and not the sona masuri or any other edible rice. other rice may turn mushy and may not have the same serving and eating experience. secondly, in addition to mushroom slices, you can add other vegetable toppings to extend this recipe. perhaps you can add veggies like sweet corn, capsicum, green peas and finely chopped carrots. lastly, this rice recipe tastes great when served the next day. hence you can prepare it overnight and serve or pack the lunch box for the next day.

Ingredients
for rice:
- 6 cup water
- 1 tsp oil
- ½ tsp salt
- 1 cup basmati rice, soaked 20 min
for mushroom fried rice:
- 6 tsp oil
- 250 grams mushroom, sliced
- 1 chilli, slit
- 3 clove garlic, finely chopped
- ½ onion, finely chopped
- 4 tbsp spring onion, chopped
- ½ carrot, chopped
- 5 beans, chopped
- ½ capsicum, chopped
- 1 tsp salt
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tsp pepper, crushed
Instructions
- firstly, in a large kadai heat 4 tsp oil and saute 250 grams mushrooms.
- stir-fry for 2 minutes, coating oil uniformly.
- simmer and cook for 3 minutes, or until mushrooms are cooked well.
- do not overcook the mushrooms, keep aside.
- in the same kadai heat 2 tsp oil and add 1 chilli, 3 clove garlic and saute well.
- now add ½ onion, 2 tbsp spring onion and saute on high flame.
- also add ½ carrot, 5 beans, ½ capsicum and stir fry on high flame.
- do not overcook vegetables.
- now add fried mushrooms and ½ tsp salt. mix well.
- make space in the centre, and add 2 tbsp soy sauce and 1 tbsp vinegar.
- stir fry on high flame, combining well.
- add in cooked rice, 1 tsp pepper and ½ tsp salt.
- mix gently, without breaking the rice.
- finally, enjoy mushroom fried rice garnished with more spring onions.
how to make mushroom pulav with step by step photo:
- firstly, in a large vessel take 6 cup water, 1 tsp oil and ½ tsp salt.
- get the water to a boil.
- further, add in basmati rice (soaked 20 minutes). make sure to drain off the water and rinse the soaked rice well.
- mix well and boil for 10 minutes or until rice is cooked completely.
- drain off the rice and pour 1 cup of cold water to stop the cooking process. allow cooling completely.
- now in a large kadai heat 4 tsp oil and saute 250 grams mushrooms.
- stir-fry for 2 minutes, coating oil uniformly.
- simmer and cook for 3 minutes, or until mushrooms are cooked well.
- do not overcook the mushrooms, keep aside.
- in the same kadai heat 2 tsp oil and add 1 chilli, 3 clove garlic and saute well.
- now add ½ onion, 2 tbsp spring onion and saute on high flame.

notes:
- firstly, use good quality mushrooms for more flavoured rice.
- additionally, make sure to cool the rice completely or use leftover rice to prepare fried rice.
- also, add vegetables of your choice to make fried rice more nutritious.
